Spring Food Fun




Dirt Cake
1 - 20 ounce package Orea® Cookies
2 - 3 1/2 ounce vanilla instant pudding
3 1/2 cups milk
1 - 16 ounce carton Cool Whip®
1 - 8 ounce package cream cheese
1/2 cup butter
1 cup powdered sugar
Chop cookies up in a blender or food processor and set aside. Make pudding according to directions. Stir in Cool Whip. Mix cream cheese, butter and sugar together in separate bowl making sure that all lumps are dissolved. Combine pudding mixture with cream cheese mixture by stirring together. Use a deep glass bowl and layer the cream mixture with the chopped cookies beginning and ending with the cookies. Refrigerate for at least 3 hours before serving. Hints: This dessert always goes first at gatherings. Kids especially love this! You can make this dessert a conversation piece by doing the following: Line a clay or plastic flower pot with a plastic wrap. Layer the cookie and cream mixture in the pot ending with the cookies. Before serving stick a plastic or silk flower in the top of the pot. Take a few gummy worms and stick in the top of the mixture leaving just the top of their heads peeking out! this will look like a real potted flower! Just make sure you take the extra gummy worms along as there is always a struggle over who gets the worm



Cherry Cobbler
1 can cherry pie filling
1 box Jiffy® cake mix
1/2 stick butter, softened
Pour pie filling into casserole dish sprayed with a non-stick cooking spray. In a separate bowl, cut softened butter into cake mix until crumbly. Sprinkle cake mix on top of pie filling. Bake at 350° for 20 minutes or until crust is golden brown and cobbler is bubbly. Enjoy! Hints: If you can't find the Jiffy® cake mix which is a one layer cake mix, you can use any white or yellow cake mix. If you are using a regular 2 layer cake mix just use half of the mix with 1/2 stick of butter or if you're feeding a large crowd: use 2 cans pie filling and mix a regular 2 layer boxed cake mix with 1 stick butter. If you don't like cherry you can use any canned pie filling with this recipe. This desert is fast, easy, no fail (unless you forget to take it out of the oven of course) and a big hit every time



Hum Dingers
1 stick butter
1 package of dates, chopped
1 1/2 cups Rice Krispies®
1 cup sugar
1 cup chopped nuts
powdered sugar
Combine butter, sugar and dates and cook for 5 minutes stirring frequently. Remove from the stove and stir in the Rice Krispies and nuts. Shape into balls and roll in powdered sugar. These are unbelievably good!

Chocolate Sauce for Ice Cream
1 cup butterscotch bits
1 cup semi-sweet chocolate chips
2 oz. Hershey's unsweetened baking chocolate
1 stick margarine or butter
1/2 tsp vanilla
powdered sugar
Melt all ingredients in top of double boiler and stir over boiling water until smooth. Add some confectioners sugar if it seems too bitter. Pour over ice cream! This sauce will form a hard candy coating over the ice cream. Thanks to my friend Becky who made this wonderful sauce for us and then passed the recipe along!



Oatmeal Chocolate Nobake Cookies
Ingredients: 2 C White sugar
1 Stick
margarine
1/2 C Milk
1 tsp. Vanilla
1/2 C Peanut butter
2 tbsp. Cocoa
3 C Oatmeal
Instructions: Mix first 3 ingrediants in saucepan. Boil one minute. Remove from heat. Add remaining ingrediants. Drop by tablespoon on wax paper and cool. Enjoy!



Apple Volcanoes
Ingredients: Apple
peanut butter
raisins
knife
teaspoon
Instructions: Cut off top of apple. Using spoon, scoop out core of apple. You and child: Fill apple with peanut butter and top with raisins. Note: If this is to be eaten later, brush apple edges with lemon juice to prevent browning and wrap in foil.



Banana Cream Pies
Ingredients: graham crackers
banana
whipped cream
Instructions: Have child tear up banana in bite size pieces. Place on graham cracker. Add a glob of whipped cream. Place another graham cracker on top and have child *squish* down. Kind of messy but kids love them.



S'mores
Ingredients: graham crackers, marshmallows, any plain chocolate bar cut in pieces
Instructions: Place a square of chocolate on graham cracker. Place marshmallow on top of chocolate. Place another piece of chocolate on top of marshmallow and top with another graham cracker. Microwave on medium until marshmallow begins to *grow*. Do not over cook. Or....at a campfire - do same procedure except roast marshmallow first. The warm marshmallow will melt the chocolate when *squished* together.



Rice Krispie Pops
Ingredients: 5 cups Rice Krispies
1/4 cup butter or margerine
4 cups small marshmallows
Popsicle sticks
Instructions: Melt margarine in saucepan on stove. Add marshmallows, stirring constantly until melted. Remove from heat, add Rice Krispies and stir until coated. Shape an oval around a popsicle stick.

Popsicles
Ingredients: 1 pkg. any flavor Kool-Aid
1 pkg. Jello
1 1/4 cups sugar
3/4 cup hot water
3/4 cup cold water
Instructions: Mix dry ingredients together. Measure approximately 6 tbsps. dry ingredients into a mixing bowl - add hot water and cold water. Pour into popsicle moulds and freeze. Remaining dry ingredients may be stored in airtight container to make more popsicles at a later date.



Lollipops
Ingredients: 1/4 cup butter
3/4 cup sugar
1/2 cup light corn syrup
Food coloring
Popsicle sticks
Instructions: Evenly space 16 popsicle sticks on a buttered cookie sheet (or non-stick pan). In a saucepan, heat butter, sugar and corn syrup over medium heat; stir until boils. Reduce heat and cook until reaches 270 degrees on a candy thermometer, stir often. Add food coloring of your choice. Drop mixture by tablespoon onto the end of each popsicle stick. When lollipops are cool, remove from sheet and wrap in plastic wrap.



Jiggily Jello
Ingredients: 2 envelopes unflavored gelatine,
6 oz. pkg. Jello (any flavor)
2 1/2 cups water
Instructions: Dissolve gelatine in one cup cold water. Set aside. In saucepan, bring 1 cup water to a boil and add Jello. Add gelatine mixture. Stir in 1/2 cup cold water. Pour onto lightly greased pan and set in refrigerator until firm (approximately 2 hours). Use cookie cutters or a sharp knife to cut out interesting shapes.



Aquariums
Ingredients: Blue Jello Powder
Gummy fish
Glasses (clear plastic are best)
Instructions: Prepare blue Jello as directed. Pour into glasses and refridgerate until partially set (about 1 hour). Once partially set insert gummy fish into Jello. Set until firm. There you have it, the kids can now eat their aquariums.



Edible Necklace
Ingredients: Shoestring licorice
Cereal with holes
Candy with holes
Instructions: Have kids thread candy or cereal on licorice. When complete tie ends together. This is a good project to bring along before heading to the grocery store or shopping with children. They can munch on the necklace while shopping.

Peanut Butter and Jelly Cookies
Ingredients: Store bought peanut butter cookie dough
jelly ( any fruit flavor )
knife
cookie sheet
oven
Instructions: Bake cookies as instructed on label. Allow cookies to cool. Spread jelly evenly on to each cookie with a knife. Great as an after school ( or after camp ) snack, or just to munch on.



Peanut Butter Balls
Ingredients: you'll need peanut butter, sugar
and any kind of sweet round object.
Instructions: use a spoon a scoop out a bunch of peanut butter. take the round object and mix it in the peanut butter. When you are done roll the ball in a pile of sugar. This project is very easy to do with little kids. Its delicious too!!



Frosting Butterflies
Ingredients: 4 Toll House Crackers per serving
Any color frosting
Gummy Worms
Sprinkles
Instructions: On each of the crackers put a plop of frosting and spread it around on the cracker. Add half of a gummy worm vertically on the frosting. Add the sprinkles and presto



Butterflies Peanut Butter Pies
Ingredients: 2cups of oatmeal
1/2cup peanut butter
2teaspoons of baking coco
1 teaspoon of vanilla
2 cups of sugar
1/2 cup of milk
1 stick of butter
cooking chocolate
Instructions: put sugar, coco, milk,and butter,chocolate in a pot. then put on stove. next turn the stove on and wait untill boiling. Let it boil for one minute. then move it to another burner. Then add the rest of the food. then put on wax paper and let cool



Melon Bowl
Ingredients: Watermelon,
Various other melons
Knife
Melon ball scoop or
small ice cream scoop
Instructions: Parents cut a watermelon in half. Have kids scoop out the inside using an ice cream scoop or melon baller. Cut open other melons and have kids make balls with the melon ball scoop from the other melons. Fill the watermelon with balls from the various melons. This makes a great summer snack or dessert.
