Ham and Potato Casserole

Makes 4 servings. Per serving: 553 calories, 30.6 g fat,
107.1 mg cholesterol, 721.0 mg sodium.


1 medium onion, finely chopped
3 Tbp butter
3 Tbp all-purpose flour
1/2 tsp dry mustard
1 1/2 c. milk
3/4 c (3 oz.) shredded Cheddar cheese
4 medium potatoes, peeled, sliced
1/2 c. chopped celery
1 1/2 c. chopped cooked ham
1/2 c finely chopped green bell pepper

Cake: Preheat oven to 350 degrees. Grease 3 (9-in.) round
cake pans. Line bottoms with waxed paper. Grease and flour paper.

Saute onion in butter in skillet. Stir in flour and dry mustard; season with salt and pepper to taste.
Add milk gradually. Cook until thickened, stirring constantly. Stir in cheese until melted.
Alternate layers of potatoes, celery, ham, green pepper and cheese sauce in 9X12 inch baking dish
until all ingredients are used and ending with cheese sauce. Bake, covered,
at 350 degrees for 1 hour.
Bake, uncovered, for 30 minutes longer.
