Viennese Steaks



6 medium onions, peeled and sliced
4 Tbs. butter
3 lbs. boneless beef sirloin, cut 1/2"thick and pounded 1/4" thick
3 Tbs. oil
2 Tbs. butter
salt pepper
1/2 cup beef broth


1.Cut sliced onions into 1/4" strips.
Melt 4 Tbs. butter and cook onions for 8 to 10 minutes,
or until colored and crisp.

2.Cut steak into 6 equal portions.
Heat oil and 2 Tbs. butter in heavy skillet.
Add steaks and cook 2 to 4 minutes on each side.

3.Remove steaks to a platter, sprinkle with salt and
pepper and heap a mound of fried onions on each steak.
