Deluxe Seafood Kebabs

Boy Oh Boy, but's it been along time since I updated this page!!!!! Since we are well into the summer season. I thought I would add a nice recipe for the BBQ. I found this recipe in the Company's Coming CookBook, by Jean Pare. It is in the barbecque edition.

2 Lobster Tails
Boiling Water
Scallops
Shrimp, peeled and deveined
Red Pepper, cut into squares
Butter or margarine, melted

Cook lobster tails in boiling water in covered saucepan until shells turn red. Remove. Cool to touch. Snip either side to remove meat. Slice into a total of 8 pieces.

Thread on skewers (presoak wooden skewers 30 minutes) red pepper,scallop. schrimp. red pepper, lobster, red pepper. Use this as a guide. Change the order as you like. Add more or less of any one seafood. You may use fewer per skewer for apprtizers.

Brush with melted butter. Cook on greased grill over medium-hot heat about 8 - 10 minutes. Turn and baste with butter often. Makes 4 servings.

Other vegatables may be used also, IE: whole mushrooms, onions, cherry tomatoes, etc
