CHEESE BAKE
1 pound ground beef
1/2 cup chopped onion
2 8oz. cans tomato sauce
1 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
4 cups uncooked medium noodles
1 cup cream-style cottage cheese
1 8oz. package cream cheese, softened
1/4 cup sour cream
1/3 cup sliced green onion
1/4 cup chopped green pepper
1/4 cup shredded Parmesan cheese
In a large skillet, cook meat and
onion till meat is lightly browned and onion is tender. Stir in tomato
sauce, sugar, salt, galic salt, and pepper. Remove from heat. Meanwhile,
cook noodles according to package directions, drain. Combine cottage cheese,
cream cheese, sour cream, green onion, and green pepper.
Spread half the noodles in 11x7x1 1/2 inch baking pan, top with a little of the meat sauce. Cover with cheese mixture. Add remaining noodles and meat sauce. Sprinkle with Parmesan cheese. Bake at 350 for 30 minutes.
Makes 8 to 10 servings.
Tomato - Macaroni One Pot Meal
1 pound hamburger
1 14 1/2oz. can peeled, diced tomatoes
1 8oz. can tomato sauce
1 1/2 cups elbow macaroni
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 onion, diced
Add onion to hamburger. Cook till
hamburger is brown and onion is tender, drain grease. In a large pan cook
macaroni until done, drain and rinse. Add tomatoes, tomato sauce, salt,
pepper, and hamburger. Simmer 15 to 20 minutes.

HAMBURGER PIE
1 pound hamburger
1/2 cup chopped onion

1 1 pound can (2 cups) cut green
beans, drained
1 10 3/4oz. can condensed tomato
soup

5 medium potatoes, cooked*
1/2 cup warm milk
1 beaten egg
1/2 cup shredded process American
cheese
In large skillet, cook meat and
onions till meat is lightly browned and onion is tender. Add salt and pepper.
Add drained beans and soup, pour into greased 1 1/2 quart casserole. Mash
potatoes while hot, add milk an eggs. Season with salt and pepper. Spoon
in mounds over casserole. Sprinkle potatoes with cheese. Bake in moderate
oven (350) for 25 to 30 minutes.
Makes 4 to 6 servings.
*Or prepare 4 servings packaged
instant mashed potatoes according to package directions except reserve
the milk. Add egg and season with salt and pepper to taste. Add enough
reserved milk so potatoes are stiff enough to hold shape.
TAMALE PIE
1 pound ground beef
1 cup chopped onion
1 cup chopped green pepper
2 8oz. cans tomato sauce
1 12oz. can (1 1/2 cups) whole
kernel corn, drained
1/2 cup pitted ripe olives, chopped
1 clove garlic, minced
1 tablespoon sugar
1 teaspoon salt
2 to 3 teaspoons chili powder
Dash pepper
8oz. sharp process American cheese,
shredded

3/4 cup yellow cornmeal
1/2 teaspoon salt
2 cups cold water
1 tablespoon butter or margarine
Cook meat onion and green pepper
in a large skillet till meat is lightly browned and vegetables are tender.
Stir in tomato sauce, corn, olives, garlic, sugar, the 1 teaspoon salt,
chili powder, and pepper. Simmer 20 to 25 minutes, or until thick. Add
cheese, stir till melted. Turn into greased 9x9x2 inch baking dish.
Cornmeal Topper: Stir cornmeal
and 1/2 teaspoon salt into cold water. Cook and stir till thick. Add butter,
mix well. Spoon over hot meat mixture.
Bake casserole in moderate oven (375) about 40 minutes.

LASAGNE
9 lasagne noodles
1 pound ground beef
1/2 cup chopped onion
2 cups spaghetti sauce
2 eggs
16oz. cottage cheese
1 teaspoon salt
Dash pepper
1/4 teaspoon garlic salt
8oz. mozzarella cheese (shredded)
Cook ground beef and onion until
beef is brown and onion tender. drain grease, add spaghetti sauce and simmer
5 minutes.
In a large pan cook noodles according to package directions.
In a mixing bowel add cottage cheese, eggs, salt, pepper, garlic salt, and 6oz. mozzarella cheese, mix.
In a 8x11 1/2x2 inch baking dish layer 3 noodles 1/3 of hamburger sauce mix, 1/3 cheese mix. Repeat twice, cover with remaining mozzarella cheese. Bake at 350 for 30 minutes.

FOIL DINNER
On a sheet of foil form 1/4 pound ground beef into pattie. On top of pattie slice one potato, one carrot, two or three slices onion, salt and pepper to taste. Seal foil, place on oven rack, bake at 350 for 45 to 50 minutes.

STUFFED GREEN PEPPERS
Cut off tops of medium green peppers, remove seeds and membrane. Precook green pepper cups in boiling salted water, about 5 minutes, drain.(For crisp peppers, omit precooking.) Sprinkle inside of cups generously with salt.
Cook 1 pound ground beef and 1/3 chopped onion till meat is browned. Season with 1/2 teaspoon salt and dash pepper. Add one 14 1/2oz. can tomatoes, 1/2 cup water, 1/2 cup uncooked long-grain rice and 1 teaspoon Worcestershire sauce. Cover and simmer till rice is tender, about 15 minutes. Stir in 4oz. sharp chedder cheese, shredded. Stuff peppers, stand upright in 10x6x1 1/2 inch baking dish. Bake uncovered at 350 for 20 to 25 minutes.

BACKYARD BURGERS
1 pound ground beef
1/4 cup chopped onion
3 tablespoons catsup
1 tablespoon horseradish
1 teaspoon salt
2 teaspoons mustard
Dash pepper
Combine all ingredients, mix. Shape
into 4 patties about 1/2 thick. Broil over hot coals 5 minutes, turn and
broil 3 minutes or to desired doneness.
