Microwavable Main Meals
 
 

                                             Broccoli  Rice
2 cups of Rice             3 cups of Water             1 can cream of broccoli soup
Put the contents into a microwavable safe deep bowl, microwave on high for 15 minutes.  Let stand for 5 minutes.
 

                                       Twenty Minute Lasagna
1 box oven ready Lasagna*
1 1/2- 2 pounds of ground beef
1 carton ricotta cheese**
spaghetti sauce (homemade or 26oz. jar)
1-1 1/2 pounds shredded mozzarella cheese
grated parmesan cheese**

Mix sauce and meat together. Spread thin layer into a microwavable safe dish (large and deep). With a sandwich spreader, spread ricotta cheese onto three pieces of lasagna, then arrange them into the dish cross ways. Add mozzarella cheese. Repeat layers as often as desired,  ending with sauce and cheese layer. Sprinkle top with parmesan cheese.  Seal or cover the dish. Microwave on high for 15 minutes. Let stand 5 minutes before serving.
*must use oven ready lasagna noodles
**use cheeses according to personal taste.

This recipe could be altered to create a low fat lasagna.
 

                                         Stirred   Up  Chicken
4 Boneless, Skinless Chicken Breast
1 pkg. frozen stir fry vegetables (16oz.)
1 small chopped onion
4 oz. Stir fry sauce

Wash chicken and cut into bite size pieces.  Place in colander, microwavable safe!! with paper towel underneath to drain.  Place frozen veggies in a dish with half of the stir fry sauce and stir.  Put colander with chicken on top of veggies and add onion to the chicken with the rest of the sauce.  Place lid on a Microwavable steamer and heat in microwave full power for approximately 6 minutes.  Check the chicken for it being done and stir.  Cook for another 6 - 12 minutes until done.   Great served with pasta, rice or any bread.
 

                                         Chicken Cordon Bleu

1 Boneless skinless chicken breast
1 piece of ham
1 slice swiss cheese
1 tsp. butter (not fat free)
better cheddar crumbs
Pound chicken breast.  Roll ham and cheese inside chicken breast, hold together with toothpick.  Melt butter in a small microwavable bowl.  Roll chicken in the melted butter.  Roll chicken in Better Cheddar Crumbs.  Cook for 1 1/2 to 2 minutes on high in a small microwavable bowl with vented lid.
