Sauces
 

                                                         BARBECUE SAUCE
 

2 cups ketchup
1 1/2 cups water
1 medium size onion,diced
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons prepare mustard
1/4 cup vinegar
2 tablespoons worcestershire sauce
1/2 cup brown sugar*
Combine all ingredients in a medium size sauce pan, bring to a boil. Reduce heat and simmer for 15 to 20 minutes.

*Adjust strength of sauce by adding or subtracting brown sugar.
 

                                                           Caper Sauce

1 cup Mayonnaise
1/4 cup Dairy Sour Cream
1 tbspn Horseradish
1/2 tspn Sugar
1/4 cup Capers
1 tbspn Dijon-Style Mustard
1 tbspn White Vinegar

1. Combine mayonnaise, capers, sour cream, mustard, horseradish, vinegar and sugar.
2. Mix well.
3. Serve with Beef or with any roast beef.
 
 

                                                           Hollandaise Sauce

1/4 lb Butter
3 Large egg yolks
2 tbspns Lemon juice
1/2 tspn Salt
1/4 tspn Pepper

1. Melt butter in a saucepan until bubbling hot.
2. Place egg yolks, lemon juice, salt, and pepper in a blender jar or food processor bowl.
3. Cover and mix until just combined.
4. Remove top and with machine running, pour hot butter into machine in a slow, steady stream.
5. Serve sauce immediately or keep warm in a double boiler thermos bottle.
6. Don't let the sauce boil or it will curdle and separate.
 
 

                                                             Pesto Sauce
Makes about 1 1/2 cups

1 cup Chopped basil leaves, cleaned and dried
3 Cloves garlic
1/2 cup Pine nuts or walnuts
1/2 cup Parmesan cheese, grated
1/2 cup Good quality olive oil

1. In a blender, combine basil, garlic, nuts, and cheese.
2. Slowly add oil while blender is running.
 
 

                                                          WHITE SAUCE
 

MEDIUM (1 cup)
2 tablespoons butter
2 tablespoons all-
purpose flour
1/4 teaspoon salt
1 cup milk
THICK (1 cup)
3 tablespoons butter
4 tablespoons all-
purpose flour
1/4 teaspoon salt
1 cup milk
THIN (1 1/2 cups)
1 tablespoon butter
1 tablespoon all-
purpose flour
1/4 teaspoon salt
1 1/2 cups milk
 

Melt butter in saucepan over low heat. Blend in flour, salt, and a dash of pepper. Add milk all at once. Cook quickly, stirring constantly, till mixture thickens and bubbles.
