AAahhhhh my favorite section of my cookbook. Got a sweettooth? Having guest over for dinner and don't know what to make for dessert? Or some little snacks for the kids when they come home from school? Well hope this can be a help to some of you. Some of my recipes here will be marked as Low-fat for some who is watching their waist line..hehe! Enjoy your desserts or your snacks and don't forget your milk when you serve them some cookies and your teas when serving desserts..smiles

*PINEAPPLE PARAIT*

1 pkg. (3oz.) orange-pineapple gelatin
1 1/2 c. hot water
1 pint vanilla ice cream (soften)
1 c. crushed pineapple (drained

dissolve gelatin in hot water. Add hot water. Add ice creamand stir untill dissolved. Add pineapples and chill, stirring occasionally until mixture munds. Pour into parfait glasses and chill untill firm.


*PINEAPPLE-BERRY DELIGHT*

1 can crushed pineapple
1 can blueberry pie filling
1 can Eagle Brand milk
1/3 c. Macadamia nuts (chopped)
1 carton of Cool whip (option: may use low-fat cool whip)

Mix all ingredients well. Pour into pie tins and put in freezer.
Serve when firm.


*PASSION FRUIT ICE CREAM*

2 eggs (seperated)
1/3 c. sugar
1 c. light cream
1/4 tsp. salt
2 T. sugar
1 T. lemon or lime juice
1 c. frozen passion fruit juice

Beat egg yolks slightly, add sugar and salt. Cook over low heat until spoon is coated, removed from heat and add juice. Chill. When mixture is cooled, add passionfruit juice. Beat egg whites until stiff and then add 2 T. sugar. Fold egg white in juice mixture and pour into ice cube stay. Stir during freezing.


*FRUIT SALAD*
(low-fat version)
one of my favorites

1 lg. can lite fruit cocktail (drained)
1 lg. can lite pineapple chunks or tibits (drained)
1 small basket fresh strawberry (option)
1 small pkg. Pitaccchio jello pudding mix
1 lg. tub of lite Cool whip
1/8 c. walnuts (chopped) options

Mix together in bowl fruit cocktail and pineapple chunks. Than add in tub of cool whip, mix together with fruits. Sprinkle alittle Pitacchio jello pudding mix over fruit mixture according to color. Sprinkle walnuts. Refrigeration 1 hour. You may place in dessert cups top with one strawberry on each cup and refrigerate.


"COOKIES"


*ALMOND COOKIES*

1 c. sugar
1 egg
2 tsp. almond extract
1/4 tsp. salt
1 c.shortening
3 c. flour
1 tsp. baking powder
*almonds

Cut shortening into flour, baking powder, sugar and salt. Beat egg with almond extract and add to dry ingredients. Mix and knead until soft. Form into small balls, flatten to the size of a quarter. Make a dent in e center of each cookie and place an almond in the center of it. Bake in preheated over 350 degree for 10-15 minutes.


*MACADAMIA NUT BARS*

1 c. sugar
1 egg
1 c. butter(2 blocks)
1 tsp. vanilla
1 1/2 c. Macadamia nuts (chopped)
2 c. flour

Cream butter and sugr, beat in egg and vanilla. Blend in flour. Stir in half of the nuts. Spread batter evenly in greased 9x13 inch pan. Sprinkle remaining nuts on top. Bake in preheated oven at 350 degree for 20-25 minutes. Cut into bars while still warm and remove from pan and cool on rack


*SESAME COOKIES*

1 c. butter or oleo
1 c.sugar
1 egg (beaten)
1 tsp. vanilla
2 c. flour
1/2 tsp. soda
1/4 tsp. salt
3/4 or 1 c. sesame seeds (toasted)

Cream butter and sugar, add egg and vanilla. Sift dry ingredients and add to cramed mixture. Chill for 1 hour. Form into small balls and roll in sesame seeds. Place on a greased cookie sheet and flatten with the bottom of a water glass. Bake in preheated over at 375 degree for 10-12 minutes.


*SHORT BREAD*

1 c. sugar
2 c. butter
4 c. flour
*Remove 4 T. flour and replace with 4 T. rice flour

Mix butter and sugar than add flour and mix well. To roll out,use powdered sugar instead offlour. Roll todesired thickness. Bake on a cookie sheet or cut as cookies. Prick with a fork. Bake at 325 degree for 20 minutes or untill they are golden brown.


*CRISPY DELICIOUS COOKIES*

1 c. sugar
1 c. brown sugar
1 c. oleo
1 c. mazola oil
1 egg
1 egg
1 tsp. vanilla
1/2 c. nuts
1 tsp. salt
1 tsp. cream of tartar
1 tsp. baking soda
1 c. Rice Krispies (cereal)
1 c. flake coconut
1 c. dry oatmeal
3 1/2 c. sifted flour

Cream sugars and oleo, add beaten egg, then vanilla and oil. Add sifted dry ingredients. Rice Krispies, coconut,nuts and oatmeal. Roll into balls and place on greased pan and press with fork. Bake in moderate oven till lightly brown around edges. Leave on cookie sheet for a few minutes to complete baking. Cool. Bake at 325 degree


*CHOCOLATE CHIP BAR*

1/2 c. sugar
1/2 c. brown sugar
1.2 c. oleo or butter (soften)
1 tsp. vanilla
1 egg
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped nuts
6 oz. semi sweet chocolate chips

Mix the sugars and butter until creamy. Add egg, vanilla and mix well. Add flour, baking soda, salt and mix. Add nuts and chocolate bits. Sread dough in a greased 12x9 inch pan. Bake at 375 degree for 12-15 minutes. Cool and cut into bars.


*HAWAIIAN DELIGHT COOKIES*

Crust:
1 pkg. (8 oz.) cream cheese
2 blocks margarine
2 1/2 c. flour
1/2 c. Macadamia nuts (chopped)
Cream margine and cheese add flour gradually. Roll doughinto 1 inch balls. Spread out dough like pie crust in greased mufin tins. Sprinkle nuts on top of dough.

Fillings:
3 egs
1 1/2 c. brown sugar
1/2 c. Macadamia nuts (chopped)
2 T. flour
1/2 c. shredded coconut
1 tsp. baking powder
Beat egg and add brown sugar and beat very well. Add remaining ingredients and mix again. Place mixture on crust. Bake in preheated oven 350 degree for 15-17 minutes reduce heat to 250 and bake for another 10 minutes.
