Tasty Bahamian Cuisine

Peas 'n' Rice

1 cup rice
2 cups water
1 small onion - minced
1 green pepper - diced
1/4 cups bacon - diced
1 - 8oz can pigeon peas
1/4 cup (2oz) tomato paste
salt, black pepper, paprika & thyme to taste

Fry bacon until crisp. Add green peppers and onion to the pot and cook until onion is clear. Add water, peas, tomato paste, salt, black pepper, paprika, thyme and rice. Cover the pot with a tight-fitting lid and simmer until all of the water has been absorbed.
