Here are some little know facts in FFIII and FFVII, some are kind of stupid, but hey.

Final Fantasy III

Did you know:
If you let the game play through the intro by itself twice and then start a new game that your characters will be arranged differently? Same for three times.
There were two different versions of the game released. Many of the glitches were fixed in the second version. That is also the reason you may have had problems getting genie codes to work on your copy.
Shadow being selectable in the world of ruin was added after much of the programming work was done and they missed the fact that when Shadow wakes in the bed after getting him they refer to him as a she as if it was Relm.

Final Fantasy VII

Did you know or should I say notice that:
In the FMV scene when you first go to the golden saucer they have the propellers on the back of the trolley and then during the cinema the propellers are in the front... how could they make a mistake like that?
In another FMV scene, the one where Sephiroth is coming down on Aeris to kill her... notice his hands are bare, usually he has gloves on and in the next shot where he pulls the sword out of her he has gloves on... weird.
OK... in the scene in the church, Aeris says that the church is the only place in Midgar that flowers will grow... then you go to her house... and there is a huge flower bed full of umm.. flowers, and flowers all over the roof and etc etc...
There's also a few typo's in the game such as the bad translation when Aeris is talking about the sick man in the slums... you know which I'm talking about.
And in the battle arena when it gives you a choice to fight again or not it has 2 choices the one to fight again says "Off course!!" instead of "Of course!!" man...
Here's a cool one. On the japanese version (it works on US version but not as well): Put in a disc and get into the game and get to a place where there is an FMV scene like the explosion of the first reactor at the beginning or before that when cloud looks at the reactor. Then take the disk out (not during the FMV scene.. before it) then put in another disk like disk 3 and then go into the fmv scene and it will play a different scene from the disk you put in like when cloud looks up it shows the scene with the pillers on the last disk. And because all the programming is on all the disks you can play through the game as normal with the other disk in. (there may be exceptions but I haven't found any)
Have you noticed that when you look at the list of greens when breeding chocobos in the stable that several of the greens have totally different spellings than how they're spelled in the item list.
