Jen's Everything Page has a ton of creative stuff on FF7, it's really a lot of fun.  Read the rants, they're hilarious. ^_^

Rocket Town - The Shinra 26 is the best FF7 page out there.  I won't go through everything on it, 'cause it's got pretty much everything that you could ever want... 0_o;;

Cid Jr.'s House is a great (loooong... ^_^) fanfic.  Best part?  Reeve is in it. ^_-
