Kofta Curry
Best of Pakistani & Indian Cooking and Cuisine

Koftas (Meat-balls):
Green chillies: 4
Ginger powder: 1 tsp.
Thinly sliced onions: 3
Peppercorns: 8
Chopped fresh cilantro: 1 tbsp.
Lean ground beef: 1 1/2 lbs.
Egg: 1
Salt: To taste
Oil: 6 tbsp.
Ground cilantro: 1 tsp.
Ground turmeric: 1 tsp.
Ground cumin: 1 tsp.
Crushed red pepper: 1 tsp.
Cinnamon stick: 1
Black cardamom pods: 2
Cloves: 3
Garlic powder: 2 tsp.
Fresh chopped cilantro: 2 tbsp.
Chopped tomato: 1
Water: 2 1/2 cups
 

Puree the chillies, ginger, one onion, the peppercorns and coriander to a paste in a blender
or food processor. Mix with the beef, egg and salt and shape into meat-balls.
Heat 3  oil and fry the meat-balls till brown. Drain and set aside.
Heat the remaining oil and fry the remaining onions and spices for about 5 minutes, adding
salt to taste. Add the tomatoes and cook sauce becomes thick.
Add the koftas and water and simmer till the gravy thickens again.
Serve hot with Rice Pilaf and cucumber-in-yogurt.
Serves 4-6.
