Easy Indian Cooking
Easy Vegetable Curry
Oil: 6-8 tablespoons
Curry Masala Mix: 1 Pack
Medium chopped Tomatoes: 2
Your choice of vegetables or veggie mix: 2 lbs
Water: 1/2 cup
Fresh cilantro leaves chopped: 2 tbsp (optional)
In a large pan or wok, heat oil on medium-high heat.
Add Curry Masala Mix, vegetables and stir -fry for a minute.
Add tomatoes and water. Mix well.
Reduce heat to medium-low, cover and cook 10-15 minutes till vegetables
are tender and masala (sauce) is thick.
Note: Add more water if desired
5- Turn heat off. Garnish with fresh chopped cilantro leaves and ring the
dinner bell.
Serves 4-6.
