Singapore Agar-Agar Jello

INGREDIENTS

  • 6 cups (48 fl oz/ 1.5 litre) water
  • 4 tsp agar-agar powder
  • 1 cup (250g) sugar
  • few drops of red food coloring
  • 3 or 4 drops of rose extract (essence)
  • 1/2 tsp vanilla extract (essence)
  • few drops of green food coloring
  • 3 or 4 drops almond extract (essence)
Rose extract can be bought from any Indian grocery store. It has a concentrated flavor. As a little goes a long way, be careful not to use too much.

To prepare:

  • Pour water into a saucepan, sprinkle the agar-agar powder over the surface
  • Bring slowly to a boil
  • Boil till agar dissolves, 5 to 10 mins
  • Add sugar and stir over heat till it dissolves
  • Remove from heat, pour 2 cups of jello or jelly into a bowl
  • Add red coloring and rose extract
  • Pour into a glass bowl rinsed with cold water
  • Keep remaining jelly warm in a pan of hot water
  • Refrigerate the pink jello
  • As soon as the first layer sets (takes only a few mins), pour 2 cups more agar mix into the bolw and add vanilla
  • Pour gently over first layer and chill
  • Repeat with the remaining jello colored a pale green and flavored with almond extract
  • Chill till serving time and serve from the bowl
