Chinese Recipe for Melon and Shredded Ham Soup
INGREDIENTS
- 1 X 600g Chinese winter melon or cucumbers
- 100g ham (shredded)
- 5 cups chicken stock
- 1 tbsp ginger (sliced)
- 2 tbsp spring onion (sliced)
- 1 1/2 tbsp light soy sauce

To prepare:
- Peel melon or cucumbers
- Cut into think slices and then into 4 cm cubes
- Place stock in medium pan and bring to boil
- Reduce heat to simmering
- Add melon, ginger, spring onion and soy sauce
- Simmer 2 mins or till melon is tender
- Add ham to soup, simmer for 1 min or till warmed through
- Serve immediately
HINT: Steamed slices of winter melon can be served as a vegetable. Dress with a little
cooked crabmeat moistened with chicken stock.
