INGREDIENTS

  • 500g/ 1lb egg noodles
  • 1 tbsp oil
  • 3 Asian shallots (chopped)
  • 6 cloves garlic (chopped)
  • 2 tsp red chillies (chopped - optional)
  • 1-2 tbsp red curry paste
  • 350g/ 11 1/4oz lean chicken or pork fillet (finely sliced)
  • 1 carrot (julienne strips)
  • 2 tbsp fish sauce
  • 2 tsp soft brown sugar
  • 3 spring onions (finely sliced)
  • 1/4 cup fresh coriander leaves

To prepare:

  • Cook noodles in wok/pan of rapidly boiling water for about 2 to 3 minuts or until they are just tender.
  • Drain and keep warm.
  • Heat oil in wok/ large frying pan till it is very hot.
  • Add shallots, garlic, chilli and curry paste and stir fry for 2 minutes or till fragrant.
  • Add chicken or pork to wok in 2 batches and cook for 3 minutes, or until meat just changes colour.
  • Stir in carrot, fish sauce, brown sugar and sprin onion.
  • Divide noodles between bowls and spoon over mixture.
Serve immediately, garnished with remaining coriander leaves. This makes a tasty thai chicken or pork dish. This thai food is not very spicy.
