Korean Recipe for Braised Spicy Chicken (Dak Do Ri Tang)

INGREDIENTS

  • 450g chicken thighs (cut into pieces)
  • 6 cloves garlic
  • 225g potatoes (cut into pieces)
  • 225g carrots
  • 1 cup canned chicken broth
  • 1 cup water
  • 4 tsp light soy sauce
  • 2 tsp sugar
  • 2 tsp red pepper powder
  • 1 onion (sliced)
  • 6 green onions (cut into sections)

TIP: For best results, try using baby or new potatoes. There's no need to cut them into pieces because of their size.

To prepare:

  • Blanch chicken in boiling water
  • Drain and pat dry
  • Heat 2 tbsp oil in wok
  • Stir-fry chicken till golden brown
  • Add garlic, potatoes and carrots and lightly stir
  • Add chicken broth, water, soy sauce, sugar and red pepper and bring to a boil
  • Reduce heat to low
  • Cover and cook for 15 mins
  • If too much liquid remains, remove cover and use high heat till liquid is almost evaporated
  • Add sliced onions and green onion
  • Cook for another 5 mins then serve
