Chinese Recipe for Duck Feet with Black Mushrooms

INGREDIENTS

  • 8 deep fried duck's feet
  • 150g spareribs
  • 38g dried black mushrooms (stalks cut & soak till soft)
  • 1/2 lettuce
  • 4 slices of ginger
  • 1 tsp cornflour mixed with 3 tbsp water
  • 2 cups water

    Seasoning Sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1/2 tsp salt

TIP: You can get ready-to-go duck feet that are already fried at any Asian grocery store. They can sometimes be found at the frozen section of the store. If duck feet are not available, consider using chicken feet.

To prepare:

  • Scald the duck feet in hot water then drain and set aside
  • Wash the lettuce and blanch in hot water till soft wilt and set aside
  • Heat the wok and add 2 tbsp oil
  • Add in ginger and the spareribs, stir-fry everything till fragrant
  • Add in the soaked black mushrooms and 2 cups of water
  • Bring everything to a fast boil
  • Reduce the heat and simmer for 20 mins or till done
  • Thicken with the cornflour and water mixture, continue to simmer for another 10 mins
  • Arrange the lettuce on a serving plate
  • Place all ingredients on top of the lettuce
  • Serve immediately
