Korean Recipe for Apple Wine or Sagwaju

INGREDIENTS

  • 4 red apples
  • 1/4 lb sugar
  • 1 1/2 litre Korean Soju
FYI: Korean Soju wine is a type of wine that originates from Korea and can be purchased in bottles from any Korean store. It is a clear liquid and has about 20 to 45% alcohol content.

To prepare:

  • Wash the apples well, pat them dry
  • Cut each apple into 8 sections
  • In a large jar, layer the apples and sugar
  • Let stand for 2 days
  • Add 3 times as much Korean Soju wine as the marinated apple pieces
  • Cover, put in the refrigerator and store for 3 months
  • When you get the fermented apples (color should turn dark brown), place pieces over a fine seive and let all juice drip out
  • Place the strained apple wine into a sterilized bottle and seal

TIP: It is good to use a high proof alcohol like the Korean Soju in this recipe however any strong Chinese rice wine can also be used.
