Oysters in Egg Omelette

INGREDIENTS

  • 8 tbsp sweet potato flour
  • 2 cups water
  • 1 tbsp finely chopped garlic
  • 12 to 15 fresh baby oysters
  • 1 tsp fish sauce (or to taste)
  • 3 medium size eggs
  • 1 bunch chopped coriander (garnish)
  • slices of chillies (garnish)
  • chillie/garlic sauce (dipping)
This dish will require the use of sweet potato flour however if none is available try using plain flour may be use.

To prepare:

  • Dissolve flour in water, mix well
  • Fry garlic in oil till fragrant then stir in disolved flour - continue to stir (don't stop) Image of Eggs
  • When it's hardened and somewhat brown, add in eggs and scramble
  • Mix cut vegetables with cooled sauce and black shrimp paste in large mixing bowl
  • Sprinkle in fish sauce making sure you hear the sizzling sound
  • Add oysters
  • Garnish with coriander and chillies, set aside a bowl of chilli and garlic sauce for dipping
Makes about 4 to 6 serving.
