INGREDIENTS

  • 4 medium garlic cloves - finely chopped
  • 1/4 cup fish sauce (Naam Plaa)
  • 1 tbs red chillie or cayenne pepper flakes - crushed
  • 1/2 cup sugar
  • 1 cup warm water
  • 6 tbs fresh lime juice

To prepare:

  • Combine all the ingredients in a small bowl and stir well
  • Serve at room temperature
  • Yields about 1 3/4 cup of sauce and is the ideal as a dip for most dishes
If prefer, instead of using flakes, you can give the sauce a more authentic flavour by using Thai Prik Kii Nuu (Mouse Peppers) instead. You may make this sea food dish more spicy if you so desire.
