|
To prepare:
- Clean entire fish, remove sacles and make several deep slashes in the side of each with sharp knife
- Place each fish on a layer of banana leaves
- Thinly slice 1/2 lime and tuck slices into slashes in fish with slices of garlic
- Sprinkle sliced spring onions over fish
- Grate rind and squeeze juice from remaining 1/2 lime and mix with curry paste and coconut milk in bowl
- Spoon over fish
- Wrap leaves over fish, enclose completely
- Tie firmly with string and cook over medium-hot grill for 15 to 20 mins, turing occasionally
- To serve: open up parcel by cutting along top edge with knife and fanning out leaves
- Sprinkle with chopped spring onions and slices of lime
Banana leaves make a perfect, natural wrapping for grilled red snapper (or any other
grilled food) but if they are not readily available in your area, use aluminium foil instead.
