Chinese Recipe for Stir Fried Silver Needle Noodles with Shrimp
INGREDIENTS
- 450g silver needle noodles
- 300g shrimp (shelled & deveined)
- 1 ham (sliced into strips)
- 114g green beans sprouts
- 2 spring onions (sectioned)
- 2 cloves garlic (crushed)
Seasoning Sauce
- 1 tbsp dark soy sauce
- 1/2 tsp salt
- 1/2 tsp sugar
- 3 tbsp water
NOTE: Silver Needle Noodles is also known as Yin Zhen Fen or Lao Shu Fen and is a
semi-transparent color noodles. It is also known as "rat noodles" in Malaysia and Singapore due to its
unique shape. You should buy them fresh or sealed in a package.

To prepare:
- Wash shrimps and wipe dry
- In a wok, add 2 tbsp of oil
- Add in the garlic, silver needle nooldes and the seasoning
- Stir fry till noodles are hot enough
- Add in the shrimp, ham and green beans sprouts
- Stir-fry till the shrimp is cooked and the sauce dries up
- Add in spring onions
- Stir-fry for 1 more minute then serve immediately
