Vietnamese Recipe for Fresh Shrimp Salad
INGREDIENTS
- 225g medium cooked shrimp (shelled & deveined)
- 2 tbsp roasted unsalted peanuts (chopped)
- 2 small carrots (peeled & sliced thin)
- 3 baby cucumbers (peeled & sliced thin)
- 1 scallion (chopped fine)
- 1 tbsp fresh mint (chopped)
- 1 tbsp cilantro (chopped) - leave extra for garnish
Ingredients for Salad Dressing
- 1 small red or green chilli (de-seeded and sliced thin)
- 1 tbsp rice vinegar
- 1/4 tsp freshly ground pepper
- 2 shallots (peeled & sliced thin)
- 2 tbsp peanut oil
- 2 tbsp fish sauce
- 2 tbsp lemon juice
This is a colorful salad with colors of yellow, white and pink. Not only is it pleasing to
the eyes but it is also low in calories and suitable to eat in the hot summer months.

To prepare:
- Combine all ingredients (carrots, cucumbers, scallion, mint, cilantro, shrimp) except peanuts
into a large bowl
- Mix and set aside
- How to make Salad Dressing: combine all ingredients for salad dressing into a small bowl
- Stir everything well
- Pour over salad and toss well to combine
- Transfer salad into a serving dish
- Garsnih with cohpped penauts and reserved cilantro and serve
