INGREDIENTS

  • 2 cups/ 500ml coconut milk
  • 1 cup/ 250ml chicken stock
  • 5cm piece of fresh galangal (peeled & sliced)
  • 3 chicken breast fillets (cut into bite sized pieces)
  • 1-2 tsp finely chopped chillies
  • 1 tbsp fish sauce
  • 1 tsp soft brown sugar
  • 1/2 cup fresh coriander leaves
  • extra coriander leaves for garnish
Chicken and Coconut Soup

To prepare:

  • Combine coconut milk, stock and galangal in a pan.
  • Bring to boil and simmer over low heat for 10 minutes, stirring occasionally.
  • Add chicken pieces and chilli to pan, simmer for another 8 minutes.
  • Stir in fish sauce and brown sugar.
  • Add coriander leaves
Serve immediately, garnished with remaining coriander leaves. This recipe makes a delicious chicken soup, thai style. Try making this instead of the usual chicken noodle soup.
