Chinese Recipe for Chinese Broccoli in Oyster Sauce
INGREDIENTS
- 400g broccoli
- 1 tsp peanut oil (or any vegetarian oil)
- 1 garlic clove (chopped fine)
- 2 shallots (chopped fine)
- 1 tbsp rice wine (or dry sherry)
- 5 tbsp oyster sauce
- 1/2 tsp pepper (or to taste)
- 1 tsp chilli oil (optional)
TIP: To make the chilli oil, use fresh green or red chillies. Put them into a jar then
topped with olive oil or light vegetable oil. Cover the lid then sit the jar in a refrigerator for
3 weeks before using.

To prepare:
- Cut the broccoli into small florets
- Blanch the vegetable into a pot of hot boiling water (30 secs) then drain
- Set aside
- Heat oil in wok
- Add shallots and garlic, stir-fry for 2 mins or till golden brown
- Add in broccoli and stir-fry for 2 mins
- Add in rice wine (or dry sherry) and oyster sauce for another 1 min
- Sprinkle pepper and mix well
- Just before serving, drizzle with a little chilli oil
