Singapore Recipe for Coconut Milk Rice  
	
 INGREDIENTS 
 
    
  
  -  1 1/2 cup long grain rice
  
 -  1 1/2 cup coconut milk
  
 -  1 1/2 cup water
  
 -  3 green onion (chopped)
  
 -  20g fresh ginger (grated)
  
  
TIP: This coconut milk rice dish can be made a day ahead. Just stored with 
a cover in the refrigerator./font>

To prepare:
 
 
-  Rinse the rice under cold water till the water turns clear
 -  Using a heavy saucepan, combine both coconut milk and rice together
 -  Add in the rice
 -  Bring everything to a boil then simmer gently
 -  Cover the saucepan and let simmer for at least 15 mins
 -  Remove from the heat and let stand with the cover on
 -  Use a damp tea towel on the cover for 10 mins
 -  DO NOT REMOVE LID during this process as it is still cooking and steaming
 -  Just before serving, fluff the rice using a fork
 -  Stir in the green onion and ginger then serve on a serving platter
