Chinese Recipe for Fried Egg Noodles
INGREDIENTS
- 350g dried egg noodles
- 2 tbsp vegetable oil
- 2 tbsp spring onions (chopped fine)
- light soy sauce (to taste)
- dash of salt
- dash of ground black pepper
TIP: This is a great basic noodles dish that can accompany most dishes instead of plain
steamed rice. If you wish, you can add an egg for protein. You can even make this dish slightly spicy by
adding about 2 tsp chilli oil just before serving.

To prepare:
- Follow the instructions on how to cook the dried egg noodles
- Drain, rinse under cold water and set aside
- Heat oil in a wok over medium to high heat
- Add in spring onions and stir-fry for 30 secs
- Add in the egg noodles and stir gently to separate the strands
- Lower the heat and fry the noodles till they are heated through (brown and cripsy on outside but soft inside)
- Season the noodles with light soy sauce, salt and pepper
- Serve at once
