Korean Recipe for Egg Sandwich
INGREDIENTS
- 4 pieces of whole wheat bread
- 1 tbsp butter
- 2 organic eggs
- 2 tbsp cabbage (chopped)
- 1 tbsp onion (chopped)
- 1 tbsp carrot (chopped)
- 1 tbsp brown sugar
- 1 tbsp tomato sauce or ketchup
TIP: In this version, I subsitute the white bread with whole wheat bread to make it
a healthier alternative.

To prepare:
- In a flat pan, melt the butter (save a little for later) then toast the breads on both sides
- Remove the bread and set aside
- Using a bowl, mix the eggs with the cabbage, onion and carrot
- Add the remaining butter to the pan then pour in the egg mixture
- Cut the omelete into two separate pieces and place on the toast
- Pour on tomato sauce then sprinkle with brown sugar
- Serve immediately
