Korean Recipe for Vegetarian Sesame Noodle Salad


INGREDIENTS

  • 1 packet fine rice noodles
  • 1 carrot (cut into matchsticks)
  • 4 green onions (sliced fine)
  • 1 tbsp sesame seeds (toasted)
  • 1 bunch cilantro

    Sesame Dressing:
  • 1 tsp fresh ginger (grated)
  • 1 tsp sugar
  • 2 tbsp rice vinegar
  • 5 tsp soy sauce
  • 5 tsp sesame oil
  • 5 tsp sesame paste
  • Salt & pepper to taste

TIP: For better flavor, try using high quality sesame oil and paste. The paste can be bought at any Asian grocery store.

To prepare:

  • Cook noodles according to manufacturer's direction, drain and set aside
  • Blanch matchstick carrots into boiling hot water for 1 min
  • Drain then rinsed in cold water and set aside
  • In a large bowl, combine the ingredients for sesame dressing
  • Add noodles, carrots, green onions and sesame seeds
  • Toss well to coat
  • Garnish with cilantro springs and serve at once

TIP: Although this recipe is vegetarian, if you prefer a meat alternative, just add cooked, peeled large shrimp or diced ham to the dish just before serving.
