Korean Recipe for Vegetarian Sesame Noodle Salad
INGREDIENTS
- 1 packet fine rice noodles
- 1 carrot (cut into matchsticks)
- 4 green onions (sliced fine)
- 1 tbsp sesame seeds (toasted)
- 1 bunch cilantro
Sesame Dressing:
- 1 tsp fresh ginger (grated)
- 1 tsp sugar
- 2 tbsp rice vinegar
- 5 tsp soy sauce
- 5 tsp sesame oil
- 5 tsp sesame paste
- Salt & pepper to taste
TIP: For better flavor, try using high quality sesame oil and paste. The paste can be bought at any Asian grocery
store.

To prepare:
- Cook noodles according to manufacturer's direction, drain and set aside
- Blanch matchstick carrots into boiling hot water for 1 min
- Drain then rinsed in cold water and set aside
- In a large bowl, combine the ingredients for sesame dressing
- Add noodles, carrots, green onions and sesame seeds
- Toss well to coat
- Garnish with cilantro springs and serve at once
TIP: Although this recipe is vegetarian, if you prefer a meat alternative, just add cooked, peeled large shrimp
or diced ham to the dish just before serving.
