Singapore Recipe for Spicy Long Beans
INGREDIENTS
- 150g long beans (cut into 4cm in length)
- 2 fresh red chillies
- 4 shallots
- 1 clove garlic
- 1 tsp dried silver fish (soak till soft) - optional
- 2 tbsp oil
- dash of salt
- dash of turmeric powder
TIP: Omit the dried silver fish entirely for this dish to be vegetarian.

To prepare:
- In a blender, combine the red chillies, shallots, garlic and silver fish or fine ikan bilis
till you get a paste
- If you are not using the silver fish, add 1 tsp of water instead
- Heat oil in a wok
- Add in the chilli paste and fry till fragrant
- Add in the long beans, salt and turmeric power
- Stir well then serve on a dish
NOTE: Do not overcook the long beans. They should be slightly cooked with a crunchy texture.
