Thai Recipe for Jasmine Rice with Lemon and Basil


INGREDIENTS

  • 2 cups jasmine rice
  • 3 1/4 cups water
  • 1/2 lemon (finely grated)
  • 2 tbsp fresh basil (shredded)

To prepare:

  • Wash rice under cold water till water becomes clear
  • Bring 3 1/4 cups of water to boil in pot
  • Add in rice
  • Return to gentle boil
  • Turn off heat and simmer, cover pot for 12 mins
  • Remove pot from heat and let stand (still covered) for 10 mins
  • Fluff rice with fork
  • Stir in lemon rind
  • Transfer to a serving platter and sprinkle shredded basil
