Vietnamese Recipe for Tomato Rice (Com Sot Ca Chua)
INGREDIENTS
- 4 cups cooked white rice
- 2 tbsp peanut oil
- 5 shallots (chopped finely) OR 1 medium brown onion (chopped finely)
- 2 cloves garlic (crushed)
- 3 tomatoes (chopped finely)
- salt, pepper & sugar to taste
- bunch coriander leaves for garnish

Delicious Vietnamese Tomato Rice

To prepare:
- Heat oil and fry shallots or onion and garlic till soft
- Add in tomatoes and a bit of sugar and cook till mixture is thick
- Add cooked rice and mix thoroughly
- Add in spring onions, salt & pepper and mix well again
- Serve onto a plate and garnish with the coriander leaves
