Gluten & Seitan

Seitan is Gluten cooked in a soy-sauce based broth.

Gluten is the protein from wheat that holds bread together. After cooking, gluten has a chewy, elastic texture that can be seasoned many different ways. It is baked like bread and can be chopped into pieces of various sizes ranging from shredded to cutlasses.

I make a large amount of gluten (month's worth) at a time and freeze it in single size servings. It can be thawed and added to dishes. I fry it up and use it in burritos.
