Mushroom Pastry

Makes one 9" Tart

Ingredients List

Double Pie Pastry
(for the feast, I used commercially made crusts)
1-1/2 lb Mushrooms
1 t ginger
1/4 t cinnamon
1/2t Black Pepper
2T Olive Oil
1/2 C grated Swiss Cheese
1/3 C grated Parmesan Cheese (the real stuff, not Kraft)

Instructions

Mix mushrooms with oil, spices, and approximately 2/3 of the cheese. Roll out bottom crust and place in pie pan. Arrange mushroom mixture in the bottom crust, sprinkle with remaining cheese; place top crust on the pie. Flute edges and cut vents in top of crust.
It will be very tall, but it will bake down.

Bake at 400 degrees F. for 20-25 minutes or until golden brown.
