NEW ENGLAND CLAM BOIL
1 quart of clams per person
2 fresh pork sausages per person
2 hot dogs per person
1-2 potatoes per person
1-2 onions per person
1 lb (per 4 persons) linguica or chourico (portuguese sausage)
optional:
1/4lb. fresh haddock or cod per person
1 ear of corn per person
Place clams in a pot and cover them with water. Add about 1/2 teaspoon cornmeal and a sprinkle of pepper. Let sit for about 20-30 minutes. While they are sitting, peel onions. Wash the potatoes,well (leave skin on)
cut in half or quarters. Place onions, potatoes in large kettle.
Cut the linquica, or chourico into 2inch pieces. Lay on top of potatoes and onions. Wrap 2 hot dogs and 2 sausages in wax paper.
Place these bundles, in pan. Rinse the clams, well and lay them on the bundles. If using the corn and fish, then place the corn on the clams and wrap each serving of fish in wax paper, and place on the corn. Put about 4-5 inches of water in pan, just enough to cover the potato onion layers. Cover pan tightly and steam for about an hour. Ladle the broth into cups for each person and have plenty of melted butter, and some nice crusty bread on hand. MMMMMMMMMMMM GOOD!!!
