KALE SOUP
2lbs of stew beef...cut into bite size pieces
1 large onion, diced
1 lb Portuguese linquica or chorico..cut into bite size pieces
about 5-6 beef bouillion cubes
1 large bunch,kale (washed good and cut into bite size pieces)or
1-2 boxes frozen chopped kale
about 6 good sized potatoes, pared and diced
1-2 cans of red kidney beans(depending how much you like them)
about 1 cup carrots, diced (optional, I love carrots, so I throw them in!)
1/2 - 1 cup red or burgundy wine (optional)
about 1/8 teaspoon pepper, (I do not use salt, because of the salt in bouillion and linquica, but feel free to use it, if u desire)
Cover the stew meat, linquica and onion, wine (if used) and bouillion cubes, with about 3 qts water..Simmer slowly for about 1-2 hours..(you can simmer longer if desired,it doesnt hurt this soup) then add potatoes and cook for another 30 minutes or so..then add rest of ingredients. Simmer for another 30 minutes or so. Makes a good pot of hearty soup that tastes even better the next day and also can be frozen. Serve with some nice crusty bread. Delicious!
