LYONNAISE POTATOES
6 large potatoes, pared and sliced thinly
1 large onion, sliced thinly (when in season, I love to use Vidalia onions)
1/2 stick melted butter (you can use stick margarine, but butter tastes so much better! mmmmmmmm :)
salt and pepper
In large baking pan, put a layer of sliced potatoes, then a layer of sliced onions, pour melted butter over them, and salt and pepper. Keep making these layers, until everything is used. Then put in 350 degree oven and bake for about 45 minutes. Turn carefully,,,occasionally. If you prefer them soft, cover with foil, if you prefer them more crispy, then bake uncovered. Makes a nice change, from baked, mashed, or fried potatoes, and goes well, with any meat, poultry, or fish entree. This recipe can be made as large or as small as your need dictates. YUMMY TOO!
