The Family Dinner
Everyone knows you have turkey and dressing, and pumpkin pie you say?
Nah, there are some special things I like so I will share them with you today.
How about Gumbo wiht some Jambalaya for fun and apple pie with ice cream on the side?
After all, in the south is where I reside (hehehehe)
Here goes....I'm not a cook but I sure like to eat.
So if you trust me then you can use these to make a special Cajun Treat.
CREOLE CHICKEN AND OKRA GUMBO
Pass warm biscuits, or stick with tradition and mound some
cooked white rice in the center of each bowl of soup. For a nice go-with, toss shredded lettuce with artichoke hearts, sliced mushrooms and creamy buttermilk dressing. Stay with the southern theme by ending with pecan pie. (But I like apple pie and ice cream better :-)
2 tablespoons vegetable oil
2 tablespoons all purpose flour
1 cup sliced frozen whole okra
1 14 1/2-ounce can low-salt chicken broth
1 14 1/2-ounce can diced tomatoes
1/2 pound skinless boneless chicken thighs, cut into 1-inch pieces
1 teaspoon dried thyme
3/4 to 1 teaspoon hot pepper sauce (such as Tabasco)
Stir vegetable oil and flour in large saucepan over high heat until smooth and dark brown, about 3 minutes. Mix in okra, then chicken broth and tomatoes with their juices; simmer 3 minutes. Sprinkle chicken with thyme, salt and pepper.
Add to saucepan. Simmer gumbo uncovered until chicken is cooked through, about 10 minutes. Season gumbo to taste with hot pepper sauce, salt and pepper and serve.
2 Servings; Can Be Doubled.

Jambalaya
1/2 pound small shrimp
1/2 pound catfish fillet
1 medium-size yellow onion
1 medium-size sweet green pepper
1/2 pound mushrooms
2 tablespoons safflower oil
1 teaspoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon ground hot red pepper
2 tablespoons tomato paste
1/2 teaspoon chopped fresh basil
1/2 teaspoon chopped fresh oregano
2 tablespoons chopped green onion
1 pint shucked oysters or clams
2 cups cooked rice
Peel and devein the shrimp. Cut the catfish into 1-inch pieces. Thinly slice the onion, green pepper and mushroom.
Heat 1 tablespoon of the oil in a large skillet. Add the onion, green pepper, mushrooms, garlic, salt and ground hot red pepper.
Sauté the mixture over medium heat until the onion is soft, for about 5 minutes. Add the tomato paste, basil, oregano and
enough water to give the mixture a sauce-like consistency. Reduce the heat to low and simmer the sauce for 15 minutes.
Heat the remaining tablespoon of oil in a second large skillet over medium-high heat. Add the catfish, shrimp and green onion to the skillet and sauté. When the seafood is not quite cooked through, add the oysters or clams and the sauce. Continue cooking the jambalaya just until the seafood is cooked through. Stir in the cooked rice and serve immediately. (Makes 4 servings)

and for desert....
Sugarfree Apple Pie and Ice Cream
3 cooking apples
11 oz. jar of Steel's Gourmet Honey Nature Sweet
2 Tablespoons margarine
2 Tablespoons corn starch
2 Tablespoons raisins (optional) nutmeg & cinnamon to taste
1.Peel, core and slice apples.
2.Mix remaining ingredients.
3.Pour into pie shell.
4.Bake 400 degree for 45 minutes on cookie sheet.
I just don't even eat sugarfree but figured I would put it here for all the health conscious people who visit you. Besides, the calories you use in the ice cream you lose in the sugarfree (grins) The Pastry Chef
