Savory Chicken Salad

This salad offers a delightful combination of tastes and textures. It can be prepared in advance and stored, tightly covered, in the refrigerator. If you do that, do not add the almonds until serving time or they will lose much of their crispness. Delicious served on a Croissant or Roll!

1/4 cup fat-free mayonnaise
1/4 cup fat-free sour cream
1 tablespoon honey mustard
1/4 teaspoon celery salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon onion powder

3 cups diced cooked chicken
1 1/2 cups seedless green grape halves
1 cup chopped celery
3/4 cup sliced scallions, including tops
1/4 cup chopped almonds, toasted

In a large bowl, combine the mayonnaise, sour cream, mustard, celery salt, pepper and onion powder; mix well. Add the chicken, grapes, celery and scallions; toss until well mixed. Stir in the almonds.

Makes 4 servings
