Chicken&Turkey
Crispy Orange Oven Fried Chicken
2lb.chicken pieces(skin removed)
1/4 cup orange marmalade
2 tsp.fresh ginger,grated
3 tbsp.light soya sauce
3 tbsp.fat free sour cream
1 tsp.hot pepper sauce
1 1/4 cups cups fine crushed unsalted cracker crumbs
1/4 cup sliced almonds,coarsely chopped
Non sticking cooking spray
Mix ginger into marmalade and brush onto the,
chicken pieces to coat.Stir soya sauce,sourcream,
and hot pepper sauce together,add to cracker crumbs,
and almonds.Combine well.
Press mixture onto the coated chicken pieces.
Place chicken on baking sheet lightly sprayed
with non stick cooking spray.Bake at 375 in a preheated
oven for 25-30 minutes or until chicken juices
runs clear without a trace of pink in it.

Vietnamese Grilled Chicken
4 bone in chicken breasts,skin removed
1/4 cup lime juice
2 tbsp.fish sauce
3 cloves garlic,minced
2 jalapeno peppers,seed and finely chopped
2 tbsp.sugar
1 tbsp.vegetable oil
Place chicken breats in shallow dish.Combine remaining
ingredients and toss half marinade with chicken,
set remaining aside.Cover chicken and allow
to marinate 1 to 4 hours in refrigerator.
Grill over medium heat for 25-30 minutes,brushing
with remaining marinade,turn once.
Or roast in single layer with reserved marinade,
in shallow roasting pan at 375 for 30 minutes,
turning once and basting,broil for 8 to 10 minutes to brown.

Turkey Meatloaf
1 1/2 pounds turkey breast
1/2 cup italian bread crumbs
1/2 cup uncooked oatmeal
1/2 cup ketchup
1/2 cup milk
2 tbsp.soy sauce
1 large onion,chopped
1 egg
Black pepper to taste
1/Preheat oven to 350.In large bowl,combine all ingredients.
2/Place mixture in a loaf pan,coated with nonstick
cooking spray.Bake at least 1 1/4 hour or until
juices run clear.

Turkey Torte
1 can(3 ounce)chow mein noodles
2tbs.butter or margarine,cut into small pieces
White from 1 egg yolk,beaten with fork
1 pound ground turkey,thawed if frozen
1 can(14 ounce)chop suey vegetables,drained
1tbs.soy sauce
1/2 tsp.garlic powder
1/4 tsp.pepper
1/Heat oven to 375.Have a nonstick 8-inch pan ready,
In large bowl,crush 1 cup noodles with the butter,
until mixture is crumbly and pasty.
Add remaining noodles and egg white,mix well.
2/Press firmly onto bottom of pan.
Bake 12 minutes or until crust is firm,
and shrinks slightly from sides.Remove from
oven,raise temerature to 425.In same bowl,
mix remaining ingredients.Press firmly,
and evenly over baked crust and to edge of pan.
3/Meat mixture will shrink to size of crust.
Bake 20 minutes or until meat mixture feels,
firm and juices that have surfaced look clear.
Invert onto ovenproof serving plate,
drain off juices.Return to oven 3-5 minutes,
to crisp crust on top.Cut in wedges.

Sweet And Sour Chicken
In a frypan,heat until foamy:
1/4 cup butter or margaine
Add and cook until browned:
2 1/2 pounds cut up chicken
Stir in:
1 cup water
Bring to a boil,cover,reduce heat and simmer
for 45 minutes or until chicken is almost tender.
Mix together and stir in:
1/2 cup cider vinegar
1/3 cup sliced gherkins
1/4 cup lightly packed brown sugar
2 tbsp.honey
1 tbsp.worcestershire sauce
1 tbsp.ketchup
Cover and continue cooking for 15 minutes
longer or until chicken is tender.
Serve with cooked rice.

Scallop Turkey Stroganoff
In a large frypan,heat until foamy:
1/4 cup butter or margarine
Stir in and cook until almost transparent:
1/4 cup finely chopped onions
Mix in and cook until tender:
1/2 pound mushrooms,sliced
Blend in:
3 cups cubed cooked turkey
8 ounces fresh scallops,quartered
2 (10-ounce)cans condensed golden mushroom soup
1/4 tsp.pepper
Bring to a boil,cover,reduce heat and simmer
gently for 20 minutes,stirring occasionally.
Stir in and heat,but do not boil:
1 cup thick sourcream
Serve with cooked noodles or rice

Chicken In Wine Sauce
8 chicken breasts,skinned and deboned
1 package.swiss cheese slices
1 package.herb spiced stuffing mix
1 can cream of mushroom soup or chicken soup
1/2 cup white wine
1/2 cup margarine
Lay chicken pieces in 9x13-inch greased baking dish.
Lay cheese slices on top.Blend soup and wine till smooth,
then pour over chicken and cheese.Melt margarine in
saucepan,add package of stuffing mix,stir until stuffing
mix is coated with margaine.Pour over chicken,spread
evenly.Bake covered at 350 for 1 hour.Uncover,bake 1/2 hour more.

Barbecued Lemon Chicken
3 lb.chicken breasts
1 cup lemon juice
salt and pepper
2 tbsp.paprika
Baste:1/2 cup melted butter
1 clove garlic
1 tsp.crushed thyme
Place chicken breasts in shallow pan with juice,
salt,pepper,and paprika.Let sit in fridge at least 2
hours or all day.Mix melted butter,garlic and thyme,
in small pot.Place breasts on middle grill over medium,
low heat for 30 to 40 minutes,turning and basting often,
until breats are golden brown.

Turkey Meatloaf
1 pound ground turkey
1 cup bread crumbs
3 egg whites
2 medium tomatoes,finely chopped
1/4 cup green pepper,finely chopped
1/2 tsp.horseradish
1/4 to 1/2 tsp.salt
1 medium onion,finely chopped
1/4 to 1/2 tsp.pepper(to taste)
Preheat oven to 375 degrees.Combine all ingredients
and press into 9x5 inch loaf pan.Bake 50-60 minutes.

Turkey Chow Mein
1 green pepper,cut into strips
2 cups celery,chopped
1 cup sliced onion
1 cup mushroom pieces
4 tbsp.butter
2 cups turkey stock
1 tsp.salt
2 tbsp.corn starch
3 cups turkey,cut into small pieces
3 tbsp.soya sauce
1 can bean sprouts
2 cans chow mein noodles,optional
Brown green pepper,celery,onion and mushrooms in butter.
Add broth,salt and pepper,bring to a boil.Mix corn
starch with small amount of water to form paste.Add to
liquid and stir.When thickened,add turkey and stir in
soya sauce.Add bean sprouts.Heat thoroughly and
serve over noodles or rice.

Mexican Chicken
2lb.chicken,cooked,deboned,broil or bake
1 large onion,chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 can tomatoes and green chillies(mexican section)
1 cup grated cheddar cheese
1 small can mushrooms,drained
1 tbsp.butter
Taco chips,any flavour
Melt butter in saucepan,saute onion till tender.
Add undiluted soups,mushrooms and tomotaoes and green chillies.
Mix in chicken.Line 2 to 3 quart baking dish,
with taco chips and pour chicken mixture over.
Sprinkle cheese on top.Bake in 325 oven for 45 minutes,
or 10-15 minutes in microwave.Cook until cheese bubbles.
