Bisto Steak Subs
1 1/2 pounds beef sirloin steak,cut 1-inch thick
1 loaf french bread,thin,split
lettuce leaves
1 7oz.jar roasted red peppers,rinsed,drained
3/4 tsp.garlic salt
1/2 cup jalepeno pepper,monterey jack cheese,
shredded mild giardiniera(optional)
Place beef steak on grid,grill 16-20 mimutes for
medium rare to medium doneness,turning once.
Line bottom of bread with lettuce,top evenly with pepper strips.
Crave steak into thin slices,season with garlic salt.
Arrange over peppers,top with cheese.
Close sandwich,cut into 4 or 6 portions.
Serve with giardiniera.

Gingered Beef
1 tbsp.vegetable oil
1 medium green pepper,thinly sliced
1/4 cup chopped onion
1 cup sliced mushrooms
1lb.sirloin or inside round steak,thinly sliced
1 tbsp.water
1 tbsp.soya sauce
1/4 tsp.ginger
1/8 tsp.garlic powder
1 tbsp.cold water
1 tbsp.corn starch
Saute vegetables in hot oil in skillet until,
it is tender crisp.Remove vegetables from pan.
Brown meat in remaining hot oil.Add water,soya sauce,
ginger and garlic powder.Cover,simmer 5 minutes or
until meat is tender.Stir in vegetables.Combine water
with corn starch,add to meat mixture and stir
until it is thicken

Swiss Steak
Cut into 6 portions:
1 1/2 pounds round steak
Dredge in mixture of:
1/2 cup flour
1 tsp.salt
1/4 tsp.pepper
In frypan(with lid)heat until foamy
3 tbsp.bacon drippings
Add floured meat and cook until browned on one side.
Turn meat and then add:
1 large onion,finely chopped
Continue cooking until meat is browned on second side.
Stir in:
1 (10-ounce)can undiluted consomme
1 soup can water
1/2 cup chopped celery
1 green pepper,chopped
Bring to a boil,cover,reduce heat and simmer
about 2 hours,or until meat is tender.

Beef A Litalien
In suacepan,heat thoroughly:
2 tbsp.vegetable oil
Add and cook until transparent
1 clove garlic,finely chopped
Blend in:
1(19-ounce)can tomatoes
1(7 1/2-ounce)can tomato sauce
3/4 tsp.salt
1/4 tsp.oregano
1/4 tsp.pepper
2 cups cooked cubed beef
Bring to a boil,reduce heat and simmer
uncovered 15 minutes or until desired consistency.
Serve as sauce with cooked noodles.

Corn Beef And Cabbage
1 small cabbage
2 tbsp.butter
1/4 cup chopped onion
12oz.can corned beef
3 tbsp.butter
3 tbsp.flour
1 1/2 cups milk
1/2 tsp.salt
1/8 tsp.pepper
2 tbsp.butter for topping
1 cup bread crumbs
1/Cut cabbage in half.Cut each half into
3 pieces.Remove core.Boil in salted water
for 20 minutes.Drain.Put in bottom
casserole dish.
2/Melt butter in frying pan.Add onion,and corned beef.
Saute,breaking up beef,until onions are clear.
Pore over cabbage.
3/In small saucepan melt butter.Stir in crumbs
to blend.Sprinkle over top.Bake uncovered
in 350 oven for 30 minutes.

Sheperds Pie
3 cups cooked roast beef,ground
1 small onion,sliced
1/2-1 cup beef gravy
1 tsp.salt
1/4 tsp.pepper
3 cups mashed potatoes
1/Put beef and onion through food chopper.
Or chop into small pieces.
2/Add gravy.Mix well.Should be pasty to
hold together.Put in 9x9 inch pan.
Adjust seasoning.
3/Spread potatoes over top of meat.
Bake uncovered in 350 oven for 30 minutes,
or until hot and potatoes are brown.

Porcupines
1 lb.ground beef
1/4 cup chopped onion
1 tsp.salt
1/4 tsp.pepper
1/4 cup long grain rice
1 10 oz.condensed tomato soup
1 10 oz.soup can of water
1/In medium bowl sized dish,mix meat,
onion,salt,pepper,and rice.mix well.
Shape in 25 meatballs.Arrange evenly,
into square baking dish.
2/Combine soup and water.Pour over meatballs.
Cover.Bake in 350 oven for 1 hour,
or until rice is cooked.

Chinese Chow
1 1/2 lbs.ground beef
7 oz.pkg.frozen chinese pea pods
2 cups celery
1 cup chopped onion
1 10 oz.condensed tomato soup
1/2 cup milk
1 tsp.salt
1/4 tsp.pepper
2 cups chow mein noodles
1/Fry beef in frying pan until well browned.
Drain off fat.Spread meat in 2 quart casserole dish.
Set aside.
2/Thaw pea pods.Spread over top of meat.
3/Slice celery on an angle.Spread over pea pods.
4/In medium bowl combine onion,soup,milk,
salt and pepper.Mix together well.Por over celery.
5/Sprinkle dry noodles over all.Cover.
Bake in 350 oven for 40 minutes.

Pepper Steak
1 1/2 pounds round steak,cut into 1/2 inch strips
1/4 cup flour
1/2 tsp.salt
1/8 tsp.pepper
1(8-ounce)can tomatoes
1 3/4 cups water
1/2 cup chopped onion
1 small garlic,minced
1 tbsp.beef flavored gravy mix
2 largegreen peppers
1 1/2 tsp.worcestershire sauce
Coat beef strips with mixture of flour,salt&pepper.
Brown meat in scant amount of hot grease.Drain tomatoes
reserving liquid.Add reserved liquid,water,onion,
garlic and gravy mix to meat.Cover,simmer until
meat is tender,about 1 1/4 hours.Uncover,stir in
worcestershire sauce and green peppers.
Cut into strips.Simmer for 5 minutes.
If sauce is too thin,combine 1-2 tbsps.flour
with equal amount of cold water,stir into sauce.
Cook and stir until thickened and bubbly.
Add drained tomatoes(cut up)cook 5 minutes more.
Serve over hot rice

Cut into 6 portions:2lbs round steak
Barbecue over medium hot heat,about 5 minutes on each
side or until browned.Place meat on a large piece of,
aluminium foil.Pour over top:1(10-ounce)can condensed
onion soup,and 1 cup dry red wine.
Wrap tightly.Barbecue over medium for about 2 hours,
or until meat is tender.

Zesty Steak
In plastic bag,combine:
1 cup malt vinegar
1 cup cider vinegar
1 clove garlic,chopped
pinch of pepper
Add and then tie bag:
1 flank steak(about 1 pound)
Allow to marinate for 1 hour
Drain meat and barbecue for about 5 minutes,
on each side or until meat is tender.
brush occasionally with liquid.

Carribbean Spareribs
Cut into 8 portions;
4lbs.spareribs
In large saucepan,mix together;
1/4 cup soya sauce
1/4 cup ketchup
1/4 cup honey
1 1/4 cups water
Add meat,bring to boil,cover,reduce heat and simmer
for 30 minutes or until partially tender.
Barbecue spareribs for 10 minutes on each side,
or until meat is tender.Brush with barbecue sauce.

Sloppy Joes
1 pound ground beef
1 onion,chopped
1 cup ketchup
1 tbsp.sugar
1 tbsp.vinegar
1 tbsp.mustard
Brown together beef and onions.Pour off fat,
and add remaining ingredients.Simmer 20 minutes.
Spread on hamburger buns.

Dill Sauced MeatLoaf
1 1/2 pounds ground beef
1/2 cup chopped onion
1/2 cup soft bread crumbs
1/2 cup dill pickle juice
1 egg
1 tsp.salt
1/2 tsp.pepper
1 cup ketchup
1/2 cup water
4 tbsp.sugar
2 tsp.worcestershire sauce
1 cup chopped dill pickle
Combine first 7 ingredients.Shape into a loaf
and place in shallow baking dish.Or put into
a loaf pan.Combine remaining ingredients and pour
over meat.Bake at 350 for 1 1/4-1 1/2 hours,basting twice.
