Thai Flat Bread
6 ounce pizza dough
2 ounce olive oil
1 ounce a taste of thai garlic chili pepper sauce
2 tbsp.scallions,chopped
2 cloves garlic,minced
3 tbsp.lemon grass,minced or 1 tbsp.lemon zest,minced
1 tsp.a taste of thai seasoning(fish)sauce
1 tbsp.a taste of thai peanut sauce mix
4 tbsp.white wine
Stretch pizza dough to desired size.
Brush with olive oil.
Evenly distribute remaining ingredients over top of dough.
Bake at 450 until golden on bottom.
About 15-20 minutes.

Soft Egg Bread
1 cup white cornmeal
1 quart buttermilk
3 eggs,beaten
1 tsp.salt
1 tsp.soda
1 tsbp.sugar
Combine cornmeal and buttermilk,beat in eggs,
salt,soda and sugar.Pour into 2-quart buttered
baking dish,bake at 325 for 1 1/2 hours.

Soda Scones
2 cups flour
1/2 tsp.soda
1/2 tsp.cream of tartar
1/4 tsp.salt
3/4 cup sourmilk or buttermilk
Sift dry ingredients,then add milk to make
a soft dough.Turn onto floured board and knead
lightly into 2-inch rounds.Roll to 1/4-inch thickness
and cut each round into 4 triangles.Bake on hot
lightly greased griddle over medium heat until pale brown,
first on one side,then the other.Place in towel to
keep soft.Serve hot,spread with plenty of butter.

Golden Corn Bread
1 cup flour
1 cup yellow cornmeal
2 tbsp.sugar
4 1/2 tsp.baking powder
1 tsp.salt
3/4 cup milk
1/3 cup melted butter or margarine
Preheat oven to 425.Grease loaf pan.
Sift flour with cornmeal,sugar,baking powder,
and salt.Add to milk and melted butter,stir just
until flour is moistened,immediately pour batter
into pan,shake to spread evenly.Bake 25-30 minutes
until top is golden and firm,drawing away from edge of pan.

Cheese Bread
2/3 cup shortening
2 eggs
1 1/2 cups grated cheddar cheese
2 1/4 cups cornmeal
1/4 tsp.salt
1/3 cup milk
Cream the shortening.Add the eggs,beating well.
Add the cheese and mix until smooth.Combine the
cornmeal and salt.Add to the cheese mixture,
alternately with the milk,mixing steadily.
Knead together with the hands until well blended.
Preheat oven to 375.Place the dough in a greased
9-inch loaf pan.Cover the top with a piece of
aluminum foil.Bake for 35 minutes or until firm.

Native Bread
1/2 cup flour
1 1/2 cups cornmeal
1/2 tsp.salt
4 tbsp.sugar
2 eggs,beaten
1 cup sour cream
1 tsp.baking soda
1 1/2 cups milk
Sift the flour,salt,cornmeal and sugar into a bowl.
Add the eggs and sour cream,beat until very smooth.
Preheat oven to 400.Dissolve the baking soda in the milk.
Add to the previous mixture and stir well.Pour into a
buttered 12- inch loaf pan.Bake at 400 for 25 minutes,
or until the bread is slightly browned.

Griddle Cakes
2 cups sifted flour
3 tbsp.baking powder
1 tsp.salt
1 tbsp.sugar
2 eggs,beaten
1 1/2 cups milk
4 tbsps.butter,melted
Sift the flour,baking powder,salt and sugar together.
Beat the eggs and milk and add to the flour mixture.
Beat until very smooth.Add the melted butter and beat.
Heat an unbuttered griddle or lightly buttered
frying pan.Pour small amounts of the batter onto the
griddle and cook until brown on the bottom and air
spaces begin to form on the top.Turn the griddlecake
over only once,and cook until done on the other side.
Serve hot,with butter and maple syrup.

Sweet Sesame Biscuits
2 eggs
1/3 cup sugar
2 tbsp.milk
1/3 cup melted butter
1 1/2 cups flour
3/4 tsp.baking powder
1/4 cup sesame seeds or 1/4 cup blanched almonds
Beat 1 egg in bowl.Add sugar and beat until light.
Add the milk and melted butter,mix well.Sift the
flour and baking powder together.Gradually add the
previous mixture,kneading until dough is formed.
If the dough is to soft,add alittle more flour.
Divide into about 18 small balls,or break off 18
pieces of dough.Roll each ball between the hands
into a 9-inch strip.Fold each strip in thirds.
Pinch the ends together.Place them on a buttered
baking sheet.Preheat oven to 350.Beat the remaining
egg and brush some on each biscuit.Sprinkle with the
sesame seeds or almonds.Bake at 350 for 20 minutes
or until delicately brown.

Cheese Bread
2 cups shredded cheddar cheese
4 cups flour
2 tbsp.sugar
2 packages.dry yeast
1 cup milk
2 tsp.salt
extra flour
Scald milk,add sugar,salt and cheese.
Stir to melt cheese,cool to lukewarm,
and add yeast,mix well.Place 4 cups flour
in large bowl,make a well in center,pour
in mixture,gradually stir flour into liquid,mix well.
Knead on floured surface,adding flour as needed
until dough is very smooth and elastic.
Place dough in bowl,grease top,let rise in warm place.
Punch down,let rise a second time until double in bulk.
Place in 2 small greased loaf pans.Grease top;
let rise until not quite double in bulk.
Bake at 400 for 10 minutes,lower heat to 350 and
bake for 45 minutes or until done.Cool before slicing.

Beer Bread
4 cups biscuit mix
4 ounces cheddar cheese,grated
3 tbsp.sugar
1 can beer,room temperature
Combine all ingredients and mix until well blended.
Place in greased loaf pan and bake at 400 for 20
minutes,or until top is golden brown.

Whole Wheat Bread
2 cups milk
1/3 cup honey
4 tsp.salt
1/3 cup margarine
3 cakes yeast
2 cups warm water
10 cups whole wheat flour
Scald milk.Add honey,salt and margarine.Cool.
Proof yeast and warm water.Add to cooled milk
Beat in thoroughly 5 cups whole wheat flour.
Let rise until foamy and doubled in large bread pan.
Add remaining 5 cups flour.Let rise again until doubled.
Knead lightly for 15-20 minutes.Dough will be sticky.
Grease dough board and hands with margarine.Cover and
allow to double in bulk.Shape into 3 loaves.Let stand
in greased pans about 30 minutes.Grease top of loaves.
Bake at 375 for 1 hour,or until done.

Oatmeal Hawaiian Bread
4 eggs
1 1/2 cups sugar
2 1/2 cups flour
2 tsp.salt
2 tsp.soda
1 1/2 cups quick oats
1(20-ounce)can crushed pineapple,undrained
3 cups flaked coconut
Combine eggs and sugar,beat until light.
Sift flour,salt and soda.Add to egg mixture,
blend until smooth.Add remaining ingredients,
mix well.Spoon into greased and floured 9x5
inch loaf pans.Bake at 325 for 1 hour.Remove from pans.

Peanut Butter Bread
3/4 cup peanut butter
1/4 cup margarine,softened
2 cups all purpose flour
1/2 cup sugar
2 tsp.baking powder
1 tsp.salt
1 egg
1 1/4 cups milk
1 tbsp.grated orange peel
Beat peanut butter and margarine together until fluffy,
add flour,sugar,baking powder and salt.Mix until crumbly.
In a small bowl,combine egg,milk and orange peel.
Stir into crumbly mixture just until moistened.
Bake in greased loaf pan at 350 for 1 hour.

Walnut Peach Bread
1 cup dried peaches
3/4 cup chopped walnuts
1/4 cup butter
1/2 cup sugar
1 egg
2 1/2 cups flour
3 tsp.baking powder
1 tsp.salt
1 cup half and half
Cut peaches into small pieces with knife.
It's not necessary to soak peaches.Cream butter,
sugar and egg together.Sift flour,baking powder
and salt together,add to creamed mixture,alternately
with half and half.Stir in walnuts and peaches.
Turn into greased loaf pan.Bake at 375 for 50-55
minutes.When done put loaf on rack to cool.

Rhubard Bread
1 cup brown sugar
2/3 cup oil
1 cup sour milk
1 tsp.vanilla
1 1/2 cups diced rhubarb
1/2 cup chops nuts
1/2 cup sugar
2 eggs
1 tsp.salt
2 1/2 cups flour
1 tsp.soda
2 tbsp.margarine,melted
5 tbsp.sugar
Mix all ingredients,except margarine and final sugar,
adding rhubarb and nuts last.Pour into 5 foil baby
loaf pans(greased).Before baking top each loaf with
1 tsp.melted margarine,then sprinkle 1 tbsp.sugar
over each loaf.Bake at 350 for 30 minutes,or until brown.

Blueberry Nut Bread
2 eggs
1 cup milk
3 tbsp.margarine
1 cup sugar
3 cups flour
1/2 tsp.salt
3 tbsp.baking powder
1/2 tsp.cinnamon
1 cup blueberries
1 cup chopped walnuts
Combine eggs and margarine,beating well.
Set aside.Sift together the dry ingredients
and add to egg mixture alternately with milk.
Carefully fold in nuts and blueberries.Bake
in loaf pan for 1 hour at 350.
