Peanut Butter&
Banana Bran Cookies

1/3 cup butter,softened
1/3 cup smooth peanut butter
1/2 cup brown sugar
1 egg
1/3 cup mashed banana
1 cup flour
1 tsp.baking powder
1 1/2 cups bran cereal
Mix butter,peanut butter and brown sugar until,
light and fluffy.Beat in egg and banana.
Blend in flour and baking powder,stir in ceareal.
Drop from small spoon onto greased cookie sheet.
Bake at 375 for 10-12 minutes.

Macaroons

Preheat oven to 350
Lightly grease baking sheet
Beat to form stiff but moist peaks:
4 egg whites
Gradually beat in until stiff and shiny:
1 1/4 cups sugar
Stir in:
3/4 cup flour
1/2 tsp.salt
1/2 tsp.vanilla
Fold In:
2 1/2 cups coconut
Drop batter from a teaspoon about 2 inches apart
onto greased baking sheet.Bake for 10-12 minutes,
or until golden.

Melting Moment Cookies

1 cup flour
2 tbsp.cornstarch
1/2 cup confectioners sugar
1 cup butter or margarine,softened
1 1/3 cups.coconut
Mix flour,cornstarch and sugar in bowl.
Blend in butter until a soft dough is formed.
If dough is to soft to handle,cover and chill.
Shape into 3/4 inch balls.Roll in coconut.
Place 1 1/2 inch apart on a ungreased cookie sheet.
Bake at 300 for 20-25 minutes or until lightly browned.

No Bake Bars

2 cups chocolate chips
1/2 cup peanut butter
1/2 cup margarine
1 Package miniature white marshmallows
1/2 cup nuts
3/4 cup coconut
Melt chocolate,peanut butter and butter in saucepan.
Watch it close,so mixture doesn't burn.
Cool.add next 2 ingredients.Press into greased pan.
Sprinkle coconut on top.Put in fridge.
Cut into squares,when ready to serve.

Lemon Walnut Bars

CRUST:1 cup flour
1/3 cup confectioners sugar
1/2 cup finely ground walnuts
1/2 tsp.freshly grated lemon peel
2/3 cup unsalted butter,or regular margarine
TOPPING:2 tbsp.flour
1/2 tsp.baking powder
2 large eggs
1 cup sugar
7 tbsp.fresh lemon juice
1/Heat oven to 375.Lightly grease an 8-inch,
square pan.
2/Crust:Mix flour,sugar,walnuts and peel in
a medium bowl.Add butter and using your fingers,
rub into flour mixture until coarse crumbs form.
3/Press mixture evenly over bottom of pan.
4/Bake 15-20 minutes until top looks dry.
5/Topping:Mix flour and baking powder.Beat eggs,
and sugar with electric mixer until pale.
With mixer on low speed add lemon juice,
then flour mixture.Beat just until blended.
6/Pour over crust.Bake 20-25 minutes until topping,
is set and golden.Place pan on rack to cool completely
Cut into squares.Remove from pan.

Magic Rainbow Cookie Bars

1/2 cup margarine or butter
1 1/2 cups graham cracker crumbs
1(14-ounce)can Eagle Brand Sweetened Condensed Milk
1(3 1/2-ounce)can flaked coconut
1 cup chopped nuts
1 cup M&M'S plain chocolate candy
1/Preheat oven to 350.In 13x9 inch,
baking pan,melt margarine in oven
Sprinkle crumbs over margarine.Pour
Eagle Brand evenly over crumbs.Top
with remaining ingredients,press down firmly.
2/Bake 25-30 minutes or until lightly browned.
Cool.Cut into bars.

Ball Game Squares

20 caramels,unwrapped
3 tbs.light corn syrup
2 tbs.butter or margarine
5 cups popped corn
2/3 cup mixed salted nuts,coarsely chopped
1/2 cup raisins
1/Line a 9-inch square pan with foil,
letting ends extend above pan on 2 sides.
Generally butter foil.
2/In saucepan over medium-low heat,
stir caramels,corn syrup and butter
until caramels melt and mixture is smooth.
Before removing from heat,stir in popcorn,
nuts and raisins until well coated
3/Scrape into prepared pan,cover with
waxed paper and press mixture into an even layer
4/Let stand until firm,at least 30 minutes
Lift foil by ends and remove from pan.
Invert cookie mixture onto a cutting board,
and remove foil.Cut into squares.
Store loosely covered at room temperature
up to one week

Crisp Rocky-Road Bars

1 pkg.milk choc.chips
2 cups crisp,thin chow mein noodles
1/3 cup pecans,chopped
1/4 cup golden raisins
1 1/2 cups mini marshmallows
1/Coat an 8-inch square baking pan
with nonstick cooking spray.
Line bottom of pan with wax paper,
cut to fit.Spray paper
with nonstick cooking spray.
2/Melt chocolate chips in large bowl,
in microwave,over low heat.Stir often.
Remove,stir in noodles,pecans,and raisins,
then add marshmallows until coated.
3/Scrape into prepared pan and
spread smooth with a rubber spatula.
4/Refrigerate until firm,about 45 minutes.
Invert onto cutting board and remove wax
paper.Cut into bars.Store in fridge.

Sugar&Spice Cookies

1/2 cup butter
1/2 cup sugar
1 egg
2 tbsps.dark or light molasses
1 cup flour
1 tsp.baking powder
Pinch of salt
1/2 tsp.cinnamon
1/2 tsp.ground cloves
1/2 tsp.ginger
1 cup confectioners sugar
1/In large bowl add butter and sugar,mix well
2/Add the egg,beat with spoon
3/Pour the molasses in.Stir well.Set aside
4/Mix flour,baking soda,salt,and the 3
spices together.Sift them into a bowl.
5/Pour the sifted ingredients onto the
molasses mixture.Stir until all the
flour is mixed in
Set oven to 375.Grease the cookie sheets.
Using a teaspoon,scoop out the batter,
onto the cookie sheet,leave plenty of room,
for the cookies to expand.
Bake cookies for 10-12 minutes.
Let cool,then sprinkle with powdered sugar

Triple Chocolate Cookies

2 1/2 cups confectioners sugar
1/2 cup unsweetened cocoa powder
3 tbsps.all purpose flour
1/4 tsp.salt 4 egg whites
1 tsp.vanilla
1 cup pecans,toasted,chopped
1/2 cup semisweet chocolate pieces
1/2 cup white vanilla baking chips
1/Line baking sheets with aluminum foil
lightly coat with nonstick cooking spray.
2/Sift 1 cup confectioners sugar,cocoa
flour and salt in a bowl.
3/Beat egg whites in bowl until foamy.
Add remaining confectioners sugar and vanilla,
beat 1 minute,to soft peaks.Add sifted cocoa,
mixture,beat 1 minute until well blended.
Stir in pecans,chocolate and vanilla pieces.
Drop by tablespoons onto prepared sheets,
spacing 1 inch apart.Sift lightly with
confectioners sugar.

Chocolate Dream Bars

2 packets(11 crackers each)chocolate
grahams crackers,crushed
1/2 cup unsalted butter,melted
1 cup heavy cream
30 individedually wrapped caramels,unwrapped
12 ounces semisweet chocolate pieces
2 cups shredded sweetened coconut
1 cup white chocolate pieces
1 cup chopped pecans or walnuts
2 teaspoons vanilla
1/Heat oven to 350.Line jelly roll pan with foil.
Combine crushed crackers and butter in bowl.
Press evenly into prepared pan.
2/Bake for 8 minutes.Cool on rack.
3/Heat cream in small saucepan to simmering.
Add caramels,cook,stirring,until melted.
Remove from heat,let stand 10 minutes.
4/Combine semisweet chocolate,coconut,
white chocolate and pecans in large bowl.
Spoon onto crust.Stir vanilla into caramel
mixture.Drizzle over chocolate layer.
5/Bake in 350 oven for 20 minutes or until
golden and bubbly.Cool on rack.
Cut into bars.Refrigerate for up to 2 weeks.

Rice Krispy Squares

1/4 cup butter or margarine
6 cups rice krispies
1/2 tsp.vanilla
Melt butter in microwave for 50 seconds,
put in large bowl,stir until melted and blended.
Stir in vanilla,pour in rice krispies until coated.
Using a lightly buttered spatula press into
buttered 13x9"pan.Cool and cut into squares.

Spider Cookies

1-6oz.pkg.chocolate chips
1-6oz.pkg.butterscotch chips
1 cup salted peanuts
1 cup chow mien noodles
Melt chips in double boiler.Add peanuts and noodles.
Drop by spoonfuls onto waxed paper.Leave until hard.

Candy Bar Cookies

Choose any chocolate bar,Snickers,Crispy crunch,anything at all.
4 candy bars with chocolate
1 cup walnuts or pecans
1 cup flour
1/2 tsp.salt
1/2 tsp.baking soda
1 cup brown sugar
1/2 cup unsalted butter,at room temperature
1/2 cup vegetable oil
1 egg,slightly beaten
1-1/2 tsp.vanilla
2 cups quick cooking oats,
Not instant or presweetened
1/Preheat oven to 350.Lightly grease baking sheets.
Coarsely chop candy bars.Coarsely chop nuts.
2/In small mixing bowl,use fork to stir flour
with baking soda and salt.In large bowl,beat
sugar with butter and oil until blended.Beat in
egg and vanilla.Gradually stir in flour mixture,
just until combined.Stir in oatmeal,chopped
candy bars and nuts until evenly mixed.
3/Drop slightly rounded tablespoons at least
1 inch apart on prepared cookie sheets.Bake,
at 350 until golden brown around edges and just
firm to the touch,8-10 minutes.Cookies can be frozen.

Southern Bars

Preheat oven to 350
Melt in an 8-inch square pan:
1/4 cup butter or margarine
Spread in even layers over the butter:
1 cup graham wafer crumbs
1 cup desiccated coconut
1 cup chocolate chips
1 cup chopped nuts
Drizzle over surface:
1 (15 ounce)can unsweetened condensed milk
Bake in preheated oven at 350 for 25-30 minutes.
Cool in pan and cut into bars.
