Mexican Fruit Cake

2 cups sugar
2 cups flour
2 tsp.baking powder
1 cup nuts
2 eggs
1(20 oz)can crushed pineapple,plus juice
Mix all ingredients in large bowl.Pour into
a 13x9 greased pan.Bake at 350 for 40-45 minutes.
This cake is heavy,and needs no icing.

Honey Cake

3/4 cup mozalo oil
1 cup strong tea
1 lb.honey
4 eggs
3 cups flour
1/2 tsp.salt
1 tsp.vanilla
2 tsp.soda
1 tsp.baking powder
1/2 cup sugar
Add nuts or raisins(optional)
Mix honey and tea together and set aside.
Mix in bowl,sugar,and egg yolks,add all dry ingredients.
Blending in the honey and tea.Beat egg yolks then fold
into mixture.Pour into greased pan and bake 1 hour at 350.

Fruit Cocktail Cake

2 cups flour
2 eggs
1 1/2 cups sugar
2 tsp.salt
Combine in large bowl.Mix and then add 14oz.
canned fruit cocktail,with
1/2 cup brown sugar
1/2 cup walnuts.
Bake at 350 for 40 minutes or until done.

Zucchini Cake

3 eggs
1 cup oil
1 1/2 cups sugar
2 cups grated zucchini
2 tsp.vanilla
2 cups flour
1/4 tsp.baking powder
1 1/2 tsp.baking soda
2 tsp.cinnamon
1 1/2 tsp.salt
2 cups of raisins
1 cup chopped nuts
Mix in order given.Pour in greased pan.
Bake at 350 for 1 hour.

Raisin Cake

1 1/2 cups raisins
3 cups water
1/2 cup butter
1 cup brown sugar
1 tsp.soda
1 egg
1 3/4 cup flour
1 tsp each cinnamon,nutmeg,cloves and allspice
Boil raisins and water until 1 cup of liquid
on raisins,sift flour,soda and spices and pinch of salt.
Blend butter,sugar and egg.Drain liquid on raisins;
add to butter mixture.Add flour mixture.Add raisins last.
Mix.Put in greased and floured 8x8 inch pan.
Bake at 350 for 15 minutes and reduce heat to 325
for another 45 minutes.

Blueberry Tea Cake

1/2 cup butter
1 cup white sugar
2 eggs
3/4 cup milk
2 cups flour
dash salt
2 tsp.baking powder
dash lemon extract
2 cups frozen or fresh blueberries,
Do not thaw if using frozen berries.
Cream butter,sugar and eggs together.Mix dry ingredients,
add alternately with milk to butter mixture,
until smooth.Add lemon flavoring,fold in berries.
Pour into greased 9x12 pan and top with 3/4 cup
brown sugar and 2 tsp.cinnamon.Bake at 350 for
35-40 minutes or until browned.

Banana Cake

1 1/2 cups flour
1 tsp.baking soda
1/8 tsp.salt
1/2 cup shortening
1 1/2 cup sugar
2 eggs
1 cup bananas(about 3)
1 tsp.vanilla
1/2 cup sourmilk or buttermilk
1/2 cup walnuts(optional)
Measure flour,baking soda and salt together.
Stir.Cream shortening and sugar together.Add eggs
one at a time;beat well after each addition.
Mix in mashed banana and vanilla.Add dry ingredients
alternately with sour milk,starting and ending with
dry ingredients.Mix until well blended after each addition.
Fold in nuts.Bake in 9x11 inch pan at 350.
Dust with icing sugar.Cake is sweet,icing not required.

Carrot Cake

3 eggs
1 1/4 cup oil
2 cups sugar
2 tsp.vanilla
2 cups flour
1 tsp.cinnamon
2 tsp.soda
1 tsp.salt
2 cups coconut
1 cup crushed pineapple,drained
1 cup chopped nuts
2 cups grated carrots
Mix first 8 ingredients together.
Add remaining 4.Bake 50 minutes in 9x13 inch pan.
Bake at 350.Can also use 2- 8x2 pans.
Frosting:
1/4 cup butter
3 oz.pkg cream cheese
1 3/4 cup icing sugar
1 tsp.vanilla
Beat until smooth.

Cocoa Cake

Sift together:
1 3/4 cups flour
1/2 cup cocoa
1/2 tsp.salt
1 tsp.baking powder
1/2 tsp.baking soda
Cream:
1/2 cup shortening
Beat In:
1 1/2 cups sugar
Blend In,beating until light and fluffy;
2 eggs
1 tsp.vanilla
Add sifted dry ingredients to creamed,
mixture alternately with:
1 1/4 cups milk
Preheat oven to 350.Grease 2 8-inch cake pans.
Make 3 dry and 2 liquid additions,
combining lightly after each.Turn into prepared pans.
Bake for 30-34 minutes or until cake springs back.

Rhubarb Coffee Cake

2 1/2 cups flour
pinch salt
1/2 cup brown sugar
1/2 cup butter
3 tsps.baking powder
2/3 cup milk
1 egg,slightly beaten
1 quart diced,uncooked rhubarb
1(3-ounce)pkg.black raspberry gelatin
Streusel Topping:
1 cup sugar
1/2 cup flour
1/4 cup butter
Mix first 5 ingredients like pie dough.
Add milk and egg,press into 9x12-inch pan.
Cover with rhubarb;sprinkle gelatin on top of rhubarb.
Mix topping ingredients,sprinkle topping over gelatin.
Bake at 350 for 45 minutes.

Broiled Orange
Apricot Cake

1 package orange cake mix
1(12-ounce)jar apricot preserves
1 tbsp.lemon juice
1 (3 1/2-ounce)can flaked coconut
2 cups miniature marshmallows
Preheat oven to 350.Grease and flour cake pan.
Prepare and bake cake following package directions.
While cake is baking,combine preserves,lemon juice,
coconut and marshmallows in small bowl.Spread
over top of hot cake.Broil 3-4 inches from heat
about 2 minutes,or until the marshmallows are
lightly browned.Cool before serving.
