Salmon Pike
1 can tomato soup,undiluted
1 cup vegetable oil
1 cup vinegar
1 medium onion,sliced
1 tsp.salt
1 tsp.pepper
2-3 lbs.pike fillet
In glass casserole dish,place pike fillet.
Mix remaining ingredients;pour over pike fillet.
Marinate at least 7 hours in fridge.Next day,
place container in 250 oven,bake 5-6 hours.
this can be frozen in individual containers.

Salmon Loaf
Lightly grease a baking dish or loaf pan.
In large bowl,blend thoroughly
1/2 cup milk
2 eggs
2 tbsp.lemon juice
1 tbsp.butter
1/2 tsp.salt
1/2 tsp.pepper
Stir in:
2(7 3/4-ounce)cans salmon
1 1/2 cups unsalted cracker crumbs
1 cup mashed potatoes
Press into prepared dish.Cover with wax paper
and foil.Tie tightly.Steam for 1 1/2 hours.
Serve hot.

Lemon Stuffed
Fish Fillet
2 pounds fresh or frozen fillets
2 tbsp.butter or margarine
1/2 cup each chopped onion,grean pepper and celery
2 cups bread cubes
1 tsp.grated lemon rind
1 tbsp.lemon juice
dash of salt&pepper
1 tsp.parsley
1 tbsp.butter,melted
chives,parsley and lemon slices
Arrange half the fillet in a greased casserole.
Saute onion,green pepper and celery in butter until tender.
Stir in next 6 ingredients.Toss well.Spoon stuffing
over fillet,top with remaining fillet.Brush fillet
with melted butter.Sprinkle with chives.Cover and bake
at 450,allowing 10 minutes cooking time for each inch
of thickness of fish.Uncover during last 5-7 minutes
of baking time.Cut through all layers into squares
or pieces to serve.Granish with lemon slices or parsley.

Tuna Balls
1 egg beaten
2 cans tuna
1 small diced onion
1/2 can beef consomme soup
1 tbsp.parsley
3/4 cup miracle whip
1 tbsp.poultry seasoning
1 tbsp.prepared mustard
1 cup dry bread crumbs
Mix all together.Form into balls.
Roll in cornflake crumbs.Place on cookie sheet.
Cook 10-12 minutes at 450.Can be frozen.

Crispy Batter
1 cup flour
2 tbsp.baking powder
1 1/4 tsp.salt
2 tsp.sugar
1 tbsp.oil
1 cup water
Mix and sift dry ingredients,add oil,to water.
Mix a well in the dry ingredients and slowly
pour in liquid stirring until well blended.

Tuna Bake
3/4 cup raw macaroni
1(10oz)can cream of celery soup
1/3 cup milk
1 1/2 cups frozen peas
4 cheese slices,broken up
1/2 tsp.salt
dash of pepper
1(7oz)can of tuna
2 cheese slices for top
Cook macaroni as directed.Rinse with cold water.
Pour into greased casserole dish.Set aside.
In medium size suacepan,combine soup,milk,
peas and cheese slices.Heat and stir until hot and
cheese is melted.Add salt and pepper to taste.
Pour over macaroni.
Drain tuna.Break up into pieces and put on top of sauce.
Stir lightly to combine all together.Cover.Bake
at 350 for 20 minutes.
Remove cover.Cut cheese slices to make 4 triangles.
Arrange over casserole.Bake uncovered 5 minutes
or until cheese is melted.

Salmon Ball Casserole
2 cans salmon
1/2 cup long grain rice,raw
1/2 cup grated carrot
1/4 cup chopped onion
1 egg
1/2 tsp.salt
1/8 tsp.pepper
1 can cream of mushroom soup
1/2 cup water
Put salmon and juice into medium size bowl.
Remove skin and round bones.
Add rice,carrot,onion,egg,salt and pepper>
Mix together well.Shape into balls and put in
casserole leaving room for expansion.
Mix soup and water together.Pour over top.
Bake covered in oven at 350 for 1 hour.

Pan Fried Fish
1 pound fresh or frozen fish(anykind)
1 egg
2/3 cup fine dry bread crumbs
Shortening for frying
Thaw fish if frozen.Cut fillet into 3 portions.
Rinse fish,pat dry.In shallow dish beat the egg;
stir in 2 tbsps.of water.In another dish combine
bread crumbs or cornmeal,1/2 tsp.salt,dash of pepper.
Dip fish into the egg mixture,coat both sides.
Then roll fish in crumb mixture,coat evenly.
In large skillet heat 1/4 inch deep shortening.
Add the fish in a single layer.Fry fish for 6-7
minutes or till brown.Turn and fry the other side.
Fish is done when both sides are brown and crisp.

Baked Fish
With Mushrooms
4 fresh or frozen fish fillet
2 slices of bacon
1 cup sliced fresh mushrooms
1/2 cup green onion,sliced
3 tbsp.butter
1/4 tsp.tarrogon,and crushed paprika
Thaw fish,if frozen.In skillet cook bacon,
reserve drippings.Crumble bacon,set aside.
Cook mushrooms and onion in drippings till tender.
Place fish in baking dish,sprinkle with salt.
Combine mushrooms,onion,butter and tarragon.
Spread on top of fish;sprinkle with paprika.
Bake at 350 for 15-20 minutes or till fish
flakes easily when tested with a fork.
Garnish with crumbled bacon.
