SAUCES
LOW FAT FUDGE SAUCE
1/2 cup sugar
1/4 cup Hersheys cocoa
1Tbsp plus 1 tsp.cornstarch
1/2 cup evaporated skim milk
2 tsp.vanilla
In small saucepan,stir together sugar,cocoa and cornstarch,
stir in evaporated milk.Cook over low heat,stirring constantly
with wire whisk,until mixture boils,continue cooking and stirring,
until thickened and smooth.Remove from heat,stir in vanilla.
Serve as warm or cold sauce with fresh fruits or cake.
Refrigerate leftover sauce.

SUMMER FRUIT SAUCE
1 tbsp.cornstarch
1 cup orange juice
1/4 cup honey
2 tbsp.butter or margarine
1 tsp.finely grated orange peel
3 peaches(chopped,about 1 2/3 cups)
2 nectarines(chopped,about 1 1/3 cups)
1 plum(chopped,about 1/3 cup)
In medium saucepan,combine cornstarch and orange juice.
Add honey.Bring to a boil and over medium heat,5 minutes,
or until thickened,stirring constantly,remove from heat.
Stir in margarine and orange peel,mix well.
Stir in fruit.
Good on icecream or shortcake.

BROWN SAUCE
In frypan,heat until foamy:
2 tbsp.butter or margarine
Blend in:
2 tbsp.flour
Cook over medium heat,stirring constantly,
until a rich brown.Remove from heat.
Gradually stir in:
1 cup undiluted consomme or beef bouillon
1/2 tsp.dried onion flakes
Cook over medium heat,stirring constantly,
until thickened.Season to taste with salt&pepper.

MUSHROOM SAUCE
Cook 1/2 cup sliced fresh mushrooms in butter
before adding flour and browning.Prepare Brown Sauce
Above following basic recipe and stir in mushrooms,
1 tsp.worcestershire sauce and dash of nutmeg.
Serve with lamb,veal chops,or hamburgers.

CREAM SAUCE
In saucepan,melt:
2 tbsp.butter or margarine
Blend in:
2 tbsp.flour
1/2 tsp.salt
dash of pepper
Gradually stir in:
1 cup milk
Cook stirring constantly,until thickened.
For a thin cream sauce,decrease butter and flour
to 1 tbsp.each.For a thick cream sauce,increase
the butter and flour to 1/4 cup each.
Use with vegetables,chicken,seafood,or
in casserole dishes.

CHEESE SAUCE
Prepare cream sauce following basic recipe,
and blend in 3/4 cup grated cheddar cheese,
and 1 teaspoon worcestershire.

MUSTARD SAUCE
Prepare cream sauce following basic recipe
and blend in 1 tbsp.prepared mustard and
1/2 tsp.onion powder.Serve with green or wax beans.

HOLLANDAISE SAUCE
Combine in blender:
3 egg yolks
2 tbsp.lemon juice
1/2 tsp.salt
pinch of pepper
In small saucepan,heat until foamy
1/2 cup butter or margarine
Cover jar and blend at top speed for 2 seconds.
Uncover and continuing to blend at top speed,
very gradually pour in hot butter.Do not add
milky residue at bottom of butter pan.Cover
and place in warm water until ready to serve.
Serve with fish,broccoli,cauliflower.

CUCUMBER SAUCE
Peel,cut in quarters and remove seedy portion
from a small cucumber.Finely chop the firm
portion and measure:
2/3 cup chopped cucumber
Drain well.
Combine with:
1/2 cup thick dairy sour cream
1 tsp.onion salt
pinch of paprika
Blend and thoroughly and chill.
Serve with seafood or cold meats.

TARTAR SAUCE
Combine;
1 cup mayonnaise
1 tbsp.chopped stuffed olives
2 tbsp.finely chopped pickles
1 tbsp.chopped parsley or chives
1 tbsp.chopped green onion
1/4 tsp.tarrogon
Serve chilled with cooked fish,
cold salmon or shellfish.

CREAMY
HORSERADISH SAUCE
Whip until stiff:
1/2 cup heavy cream
Fold in:
1/2 tsp.salt
1/4 cup horseradish
Serve chilled with steaks,roast beef or ham

DILL SAUCE
1/4 cup butter,melted
1 tsp.prepared mustard
1 tbsp.minced fresh or frozen dill
Or 1 tsp.dried dill
few drops vinegar or lemon juice
Melt butter,add remaining ingredients.
Serve over cooked carrots,boiled potatoes,
or small whole beets.

MUSTARD SAUCE#2
2 tbsp.butter
dash of pepper
1 tsp.salt
1 tbsp.prepared mustard
1 tbsp.flour
3/4 cup milk
1 1/2 tsp.lemon juice
Melt butter in top of double boiler or in
heavy saucepan;add pepper,salt,and mustard
then stir in flour until smooth.Slowly add
milk;cook until smooth and thickened about
5 minutes,remove from heat and add lemon juice.
Serve over green beans,cauliflower,or cabbage.

QUICK TOMATO SAUCE
1/4 cup olive oil
1 8-ounce can tomato sauce
1 tsp.instant minced onion
1 tbsp.minced parsley
1/4 tsp.oregano
salt&pepper to taste
Combine ingredients,simmer 5 minutes.
This makes 1 cup.Use in any sauce recipes,
where tomato sauce is called for.
