Slice the potatoes thin. For this dish you will need a 2 quart bowl which can go in the oven. The dish is prepared in layers.
Place 3 or 4 tabs of butter on the bottom of the bowl. Place a layer of potatoes on top of the butter. Sprinkle the potato layer with salt, pepper and parsley. Slice the cheese and put several strips on top of the potatoes. Then pour some milk over the layer. Repeat this order over and over till you fill the bowl to the top. Put a lid on the bowl and bake in a pre-heated oven at 350 degrees for an hour. mmmmmmmmmmm good!
Cheesecake

The ingredients must be room temperature.
2-- 8oz packages of cream cheese

While the batter is blending in the mixer, place the crackers on wax paper and roll into crumbs with a rolling pin. In another bowl put the crumb mixture and fold with the butter and cinnamon. Place this into the pie pan and with a cup flatten to the bottom and sides of the pan to make the crust.
Pour the batter in. If you would like sprinkle a few of the crumbs of crust on top. Bake in preheated oven for 35 to 45 minutes. The edges will rise and the batter will appear as if it will overflow...it will not. The pie is done as cracks begin to appear. Take the cheesecake from the oven and place it on a rack to cool. Further cool it in a refrigerator 4 to 5 hours. "Serve" This is a very rich dessert, thick and creamy!
