Tauna's Mexican Tomato~Corn Pie Casserole
Ingredients
1 pound of hamburger (lean)
1/4 pound of pork sausage
1 small onion, chopped (about 1/4 cup)
1 can of stewed tomatoes (I used Home Canned from Our Summer Garden)
1 can of whole kernel corn
3 teaspoons of Mexican chili powder
1 1/2 teaspoons of salt
1 cup yellow cornmeal
1 cup non-fat milk
2 eggs well beaten-(you may substitute with eggbeaters)
1 cup of shredded lowfat Cheddar Cheese (about 4 ounces)
Cook and stir hamburger, pork sausage, onion and garlic until meat is brown; drain.
Stir in tomatoes, corn, chili powder, and salt. Heat to boiling, turn down heat and simmer for 15 minutes on low setting.
Pour mixture into 13x9" baking dish (sprayed with non-stick cooking spray) or a 2 quart casserole.
Mix cornmeal, milk and eggs with electric mixer; pour over meat mixture. Sprinkle top with cheddar cheese. Bake in 350 degree oven until golden brown, approximately 40 to 50 minutes. Cut into squares and serve. Approximately 6 -8 servings.
