Grandpa Bud's Favorite~Holiday Lime Jello Salad

Ingredients
1 large box of sugar-free lime jello
1 large can of crushed pineapple in its own juice
2 lbs of small curd low fat cottage cheese
1 large container of Cool-Whip Light
1 cup of chopped walnuts

Drain crushed pineapple juice into a 2 cup measuring cup~add enough water to make 2 cups.

Put jello into a large sauce pan . Add pineapple juice & water (2 cups), plus 1/2 cup more of water. Bring to a boil and boil for 3 minutes, stirring to dissolve jello.

Remove from heat and fold in 2 cups of miniature white marshmallows, stir until they are completely dissolved. They will melt right away.

Put pan with jello mixture in refrigerator for 30 minutes.

After 30 minutes, remove pan from refrigerator .

Fold In:
2 lb container of small curd cottage cheese
drained crushed pineapple
lg container of Cool-Whip Light
1 cup of chopped walnuts

Pour Mixture into 12 x 5 casserole dish & refrigerate.

Salad is usually set in 1 hour.

Approximately 12 Servings

It has been a Family Favorite at all of our Holiday Celebrations ever since!
Because of its Green Color, It's Great For Christmas Dinner!

I have modified the original recipe to a sugar free, low-fat version~Tauna

Lois' Watergate Salad

Ingredients

2 boxes of Pistachio Pudding
2 large cans of crushed pineapple
1 bag of miniture marshmallows
1 small bag of walnut pieces
1 large container of Cool Whip

Mix Together all ingredients and refrigerate for at least one hour.

Approximately 8-10 Servings

Dori's Chicken Ramen Salad

Ingredients
Mix Together
1 package of chicken flavored Ramen Noodles (uncooked)
1/2 head of cabbage shredded
3 green onions chopped (more optional)
2 whole chicken breasts shredded
or 1 small can of pre-cooked chicken
1/2 cup sliced almonds

Dressing Mix together and add to the above~
1/2 cup corn oil (or olive oil) 2 tablespoons sugar 1/2 teaspoon pepper 1/4 cup of vinegar 1 season packet (from noodles)

For Extra Crispiness add ramen noodles (uncooked) to salad just before serving!

Approximately 8-10 Servings
